Without so much as a taste, we kissed Hello Kitty goodbye…

 

Sure, the cute cartoon cat is adored around the globe and frequently requested on my YouTube channel, but in our boy-filled home this lovely cake was never going to hold pride of place at an 11-year-old’s birthday party! So instead, I put a notice up on Instagram offering a free kitty to a good home (it was snapped up within 3 minutes).  I later received a lovely video of a gorgeous little girl blowing out the candles on her treasured Hello Kitty cake.

 

You will need:

(serves 8-10)
one quantity of Italian Meringue Frosting (recipe video here)
2 x 20cm (7.87 inches) round cakes
1 roll of black licorice (or you could use black fondant)
yellow food colouring
140g (4.94 ounces) pink or red fondant for the bow
strawberry jam (optional)
 

This cake is fairly easy to make, I chose the italian meringue frosting because it is brilliant white, you will need a candy thermometer to make it.   If you do not mind if it is not white then you could use cream cheese frosting or butter cream or whipped white chocolate ganache instead.

    This cake was so much fun to make! I absolutely loved the Italian Meringue frosting although need a lot more practise to make it look smooth on the cake like yours. Thank you so much, my 5yr old LOVED it.

  6. Hello! I will be making this cake for my daughter’s birthday this coming weekend. Would it be okay to make this the night before? Or will the colours run? Thanks!

    • Hi Olivia, You can make this cake the day prior and add the liquorice details, the only thing I would leave off is the fondant bow. Make it and just add it on the day. The moisture from the italian meringue can cause it to weep if left for a long time.

    My girls and I have watched almost ALL of your videos! We’re addicted to Ann Reardon! They have been begging me to try one of your cakes for over a year now and I finally took the plunge with your Hello Kitty cake. It was a lot of fun and my girls were thrilled with the end result. Your Italian Meringue was SOOOO good – I used lemon juice in place of the cream of tartar. And, I skipped the fondant, just filled the colored bits with dyed frosting. My licorice arrived in a tangle instead of a roll, so it didn’t go on as neatly as I had hoped, but still respectable. Also, I need to get some acetate….. Nevertheless, this cake was the hit of the party today! Thanks for all your hard work on this blog and your videos! We love them!

  9. Could I use marshmallow fluff instead of the italian meringue frosting?

    • Hi Kati, We don’t get Marshmallow Fluff here in Australia so I can’t experiment for you, give it a go decorating on a plate and add some piece of liquorice and fondant to see if it is ok.

  11. Sorry silly question but is the cake going to be to high with the sponge cake? Is it enough for 10 people?

    • Hi Katalin, It will depend on how large you cut your serves, but it should be plenty for 10 people. You could make it double layered if you wish, just double the recipe.

    • Yes you could. One quantity of the sponge recipe will give you two round cakes suitable for use in this recipe.
