Without so much as a taste, we kissed Hello Kitty goodbye…

 

Sure, the cute cartoon cat is adored around the globe and frequently requested on my YouTube channel, but in our boy-filled home this lovely cake was never going to hold pride of place at an 11-year-old’s birthday party! So instead, I put a notice up on Instagram offering a free kitty to a good home (it was snapped up within 3 minutes).  I later received a lovely video of a gorgeous little girl blowing out the candles on her treasured Hello Kitty cake.

 

You will need:

(serves 8-10)
one quantity of Italian Meringue Frosting (recipe video here)
2 x 20cm (7.87 inches) round cakes
1 roll of black licorice (or you could use black fondant)
yellow food colouring
140g (4.94 ounces) pink or red fondant for the bow
strawberry jam (optional)
 

This cake is fairly easy to make, I chose the italian meringue frosting because it is brilliant white, you will need a candy thermometer to make it.   If you do not mind if it is not white then you could use cream cheese frosting or butter cream or whipped white chocolate ganache instead.

  1. Hi ann, after watching your hello kitty video in fascination I have decided to try and make a teddy bear cake for my little girl’s birthday. I plan on using some of the same techniques and I have bought a teddy shaped cake tin from Wilton:) I would however like to pipe the fur onto the bear using a piping bag as I love how this method looks. What frosting do you suggest I use and what piping tip? Thank you so much for your inspiring vids and I look forward to your reply:)

    • Hi Sarah buttercream is usually best for shaped piping

  3. Hi Ann, Do I need to make 140g (4.94 ounces) pink or red fondant for the bow? Or can I purchase it from stores? It’s my very first attempt to make a cake.

  4. Thanks Ann for sharing the video, the template and the italian meringue recipe. I usually like how frosting look but cannot eat them. Everyone finished their plates and didn’t leave the frosting on the side!
    I couldn’t find licorice roll here in the US but fondant worked out ok.
    I made a whipped cream/Nutella filling that was yummy but made the frosting step more challenging since the filling and the frosting kept mixing arghh… At the end, it turn out not so bad I my 2 years old little girl was happy! Thanks again

  6. hi ann, u are one of my inspiration in cake decorating, i already did cars and minions, but after typhoon Haiyan, i havnt made any 3d cakes anymore, lucky we survived the typhoon and we would like to celebrate my daughter’s 2nd birthday this month, i am aiming to make another 3d cake, and this time, i was hoping you could help me make a hello kitty 3d cake,, can i use the same cake as a head for a 3d cake, what changes should i make in this tutorial so i can make it 3d… thnks in advance ann..

    Am wondering why you used meringue frosting instead of a buttercream frosting?

    Would the meringue frosting harden in the fridge? AND would it soften after being out of the fridge to room temperature?

    • Hi Adelyn, the meringue frosting doesn’t go hard, and I used it because it is white and I like the flavour of it.

    I found your YouTube video by accident and boy am I glad I did! I just finished the cake and it really looks like her. I can’t believe it! My husband said, “Hey! You and that Australian lady did really good!” Can’t wait for my daughter to see it tomorrow

    Hello! It was fun following your tutorial for the Hello Kitty cake. The Italian meringue frosting was much easier to make than I thought it would be for a first timer =)

    This one is made for a group in my town that makes birthday cakes for free for those who may not be able to have a cake. I will be making the same one for my daughter because she loved it so much!

    Can you tell me though did you use black fondant for the outline or black licorice like you suggested in the video? I used licorice but I think I would have liked a heavy black line. I bet the whiskers would have held up better too.

    • Hi LaDonna, great job it looks amazing and for a great cause too. I used black licorice, there is soft and firm licorice the one I used was quite firm.

      • I didn’t know there were different types, I’ll have to look and see if I can find the firmer kind next time I make it.

        Also does your meringue smell fishy? I noticed the smell when I made my daughter’s cake. It tasted fine but smelled awful! I googled it because I was worried I did something wrong and didn’t want anyone to end up sick but it seems that meringue frosting can have that smell. Is there any way to tone down the smell down?

    • Hi evvy you could try and pipe the bow instead or just leave that piece for someone else to eat. For the licorice you could pipe chocolate onto some non-stick paper and transfer it once it is set.

  17. Hey Ann thanx for your lovely recipes. I am new to the baking world really want to try all the lovely stuff you make but usually get stuck with the basic stuff. How did you make the cake that you used and i have a hand mixer and want to buy a stand mixer there are so many in the market and dont know which one to buy, what capacity. I live in England. Which one would you suggest?

    • Hi Nj you can use this sponge cake recipe for this cake… https://www.howtocookthat.net/public_html/sponge-cake-recipe/ As for what mixer I agree there are lots to choose from, some are basically a hand mixer on a stand and others are more powerful so can also handle dough. So really you need to know hat you want to use it for so that you know if it is worth spending more money on it or not.

  19. Thank you for sharing the instruction Hello Kitty Cake. This Cake looks so cute. I’d like to make for my daughter’s BD. Do you have to keep this cake in the fridge before serving? Or it’s okay to keep at room temperature.

    • Hi Aj it is fine to leave at room temp as long as the room is not really hot, then I’d put in the fridge.
