Recipe for home-made fondant (sugar paste)

Fondant Recipe Ingredients

1/2 cup or 176g (6.21 ounces) glucose syrup
1 tablespoon or 15ml glycerin
1 tablespoon or 14g (0.49 ounces) gelatin
1 tablespoon or 15ml water
900g (31.75 ounces) or 7 cups plus 2 Tbsp pure icing sugar
Extra 1-2 teaspoons of water as needed

Fondant Recipe Directions

Place the glucose syrup and glycerin in a heatproof bowl.
Sprinkle the gelatin over the top and then add the water. Leave the mixture for 1 minute for the gelatin to swell and soften.
Microwave for 30 seconds, stir and repeat until mixture is clear.

Sieve icing sugar into large mixing bowl and pour in the glucose mixture.
Mix on low speed with electric mixer using a dough hook. If needed add the additional 1-2 teaspoons of water.

Once it forms a ball in the bowl tip onto the bench and continue to kneed until smooth.

If not using immediately wrap in plastic and then store in a ziplock bag.

  1. Hi anna can u tell me whats icing sugar i live in india somplz tell me how can i make this at home i am confused as i dont know whts icing sugar

    • Hi Harleen icing sugar is sugar that has been ground so fine that it looks like a powder. If it is pure the only ingredient is sugar. If it is icing mixture it has some cornstarch added to stop it clumping together. I have heard of some people trying to make it using a food processor to process sugar, but I don’t have a food processor so cant vouch for if that works well or not.

  2. i leave here in the philippines and it is very humid. i tried making home made fondant but it always looked like wet.. can you suggest a remedy for this?

    • hi andrea, yes if you live in a humid enviroment like the phillipines decrease the water in the recipe and if need add some tylose.

    • hi betty if you google search vegan fondant you’ll find a few recipes but I have not tried them myself

    i wanted to thank you for all your recipies. every time i make a round in other web sites and finally i choose your recipie and your tips thank you are the BEST.
    my question is about fondant I tried your recipie (without glycerine) but my fondant is very sticky so I have to use lot of sugar to use the rolling pin and when I want to make some flowers or cars… it melts !!! I have changed the sugar but the problem still there :'( help please thank you sooooo much

    • hi yasmine, if it is a little sticky put a tiny bit of oil on your rolling pin. WHen you say it ‘melts’ I am not sure what is happening there. Are you using pure icing sugar with nothing else added? If you see the fondant review post that compares this other commercial fondants so you can see the difference.

        I means by “it melt” like you do a tree and it drop dawn for exemple you have posted something for “tempered chocolate” it’s like you making the butterfly without tempered chocolate after moment it drops down and it look like metling.
        and here in Tunisia we have one kind of icing sugar industrial one (sure from many manufactures). thanks again for your precious time. 🙂

        • hi yasmine, thanks now I understand the decorations are not holding their shape. If you need them to set quickly you can add tylose powder or gum tex to the fondant. Otherwise you need to support it in place until it is dried out. If it is not holding its shape at all then there is something wrong.

    I love the way fondant looks but it tastes really horrible so do you know of a better tasting alternative, perhaps a little less sweet? ive heard of rolled out buttercream but couldn’t find a recipe for it. Help me out please 🙂

    • Hi sundus, not really less sweet but has a nicer flavour – have your tried modelling chocolate?

    Im just new to baking and found your site .its so interesting that i m encourage to do a cake.Btw. How many days will the stored fondant last? How long before it expires? How do you know if you can still eat the fondant?

    How about the cake? How many days will it last?

    • Hi Alexis, cake is best fresh so i wouldn’t bake it any more than 2 days before you need it, it will last longer than that and you can use it left overs etc but it is just best fresh. You can freeze cake if you need to make it any further ahead. Homemade fondant can be stored for a week or two in a ziplock bag in an airtight container. You will know if it is no longer useable because it will start to go moldy. . You can also store in the freezer.

  10. hai Ann,thanx a ton for this recipie…i tried it and came out perfect….Only pblm was that my fondant started melting a bit after putting on buttercreamed cake which was in refrigerator….also cake toppers also started melting..humidity is average here….is it because i put the fondant on a cold cake?….i tried making a few blossom flowers ,but they were not drying up even aftr keeping them to dry overnight…what can be the problem?

  12. Um… Hi I am a vegetarian and I don’t know were to buy veggie gelatin is there any thing I can use to substitute it?

    • hi tehGreatFred if you search veggie gel online you should find it, I do think it has a bit of a flavour to it though.

    Thats a very simple fondant recipe and I can’t wait to try it. The icing sugar that we get here has cornstarch added to it. I read in an earlier post that I can substitute with just powdered sugar. Can I use homemade powdered sugar? i.e. made in a mixie jar? Do I need to add anything else in that case? Thanks

    • hi jessica, you can knead it by hand it will just take a bit of work.

My question is can i use a hand held electric beater because thats all i have? Also what do you prefer marzipan or fondant? Lots of love from western australia shannon xx p.s i apologise for spelling mistakes my ipods screen is cracked <3

    • Hi Shannon, thanks for checking out the website. Hand beaters will not be strong enough but you can stir it and knead it by hand, it will just take a bit of work. Marzipan is just fondant with almond essence flavouring added. personally i prefer it without the almond.

  17. the glucose syrup i bought is very very sticky and hardens fast as soon as bottle is opened….is the consistency of glucose syrup like that?

    • Hi ginu, it is sticky, but doesn’t harden

  18. i tried making it twice for half the quantities…halfved all the ingredients…but it is not coming propoerly…means,aftr microwaving the mixture and pouring into icing sugar,after beating with an electric mixer,nothing is getting combined..icing sugar is staying as it is,,,,what can be the root cause?what mistake might have done..plz help

  19. where to find icing sugar and aren’t the glycerin and glucose medicines

    • hi yara glucose is used in medicines as well as many candy and baking recipes, if you are in the us then look for light corn syrup instead. icing sugar is also known as powdered sugar if that helps
