    Thank you for your videos. !! I am in the USA. On macarons : 1 cup and an half plus 4 teasp. of icing sugar is much less of 230 g. . Is it possible that yours is different in weight? And I can not get the lovely FOOT ! I think the position of the oven is important ? Everything you do looks easy. Lovely. Mariateresa

      WOW thanks Mariateresa, I just went and weighed out 1 1/2 cups and here is the problem 1 1/2 cups of pure icing sugar weighs 230g, but if using icing mixture it does not weigh enough. I always weigh the mixture and it works with both pure and icing mixture so I will change the recipe above to reflect the correct amounts of both. Thanks for your attention to details.

    Love your website and watching the tutorials,they are very inspiring.I am maki g a cake for my sons birthday next week,can you tell me what would be best to fill it with,as Im also wanting to decorate the cake in fondant.Would the buttercream be ok if I did it a day or so ahead,as I won’t be able to put iced cake in fridge.

      Hi Kathryn, The filling you use depends on the type of cake, if vanilla then yes butter cream is good if chocolate then I always use ganache. Butter cream is OK out of the fridge but does get soft.

    Would you be able to tell me ,when ever I cover a cake with fondant I can’t seem to be able to use a cake smoother on the top ,as it seems to get tacky and I’m scared its going to tear.Although I am able to smooth the sides.What am I doing wrong?

      Hi Kathryn is your cake cold? If so the fondant will ‘sweat’.
      IF not then dust a small amount of cornflour or icing sugar over the top or spray the fondant smoother with a fine mist of vegetable oil. I suggest you try these option on a piece of fondant that is off the cake first.

      Hi Elizabeth, I am in the process of retesting various recipes, I have an all time favourite chocolate cake that I use for everything but still not in love with a vanilla cake recipe… getting closer though once I’ve tweeked it a bit more will do a video.
