One hundred layers of crepes stacked with mascarpone cheese, raspberry sauce and ganache. Sometimes trends on youtube get a little crazy. The one hundred layers trend all started with a young lady putting on over 100 layers of nail polish on her nails. Because that video had a ridiculous amount of views everyone jumped onto the bandwagon with 100 layers of foundation and anything else you can think of. Most of these challenges result in an incredible waste of products. So when requests came in for 100 layers I was determined to make something sweet and yummy.

To make this 100 layer crepe cake you will need:

Crepe Recipe

This amount fits in my blender and makes enough for 25 crepes, to make 100 you need to make this four times over. Or if you’d prefer more filling between your crepes make this only once and spread the fillings liberally.

8 eggs
1/4 cup or 55g (1.94 ounces) sugar
1/2 cup or 110g (3.88 ounces) butter
1 tsp vanilla
4 cups or 1L (0.26 gallons) milk (4% fat)
2 1/2 cups or 400g (14.11 ounces) flour

Place all ingredients into the blender and blitz until smooth.

Raspberry Sauce Recipe
6 cups or 840g (29.63 ounces) frozen raspberries
juice of 1 lemon
4 Tbsp or 52g (1.83 ounces) sugar

Heat the raspberries and lemon juice until the fruit falls apart.
Push through a fine sieve to remove the seeds. Add sugar to taste and heat to dissolve sugar.

Ganache Recipe
700g (24.69 ounces) milk chocolate
360mL (12.17 fluid ounces) cream (35% fat)

Pour the cream over the chocolate and microwave in 30 second intervals, stirring each time until you have a smooth ganache.

750g (26.46 ounces) mascarpone cheese

Chocolate Buttercream to cover (optional)

Assemble following the directions on the video to make this huge stack of crepes.

  1. Can you make it with pancake mix?

    • Hi Bri, Some pancake mixes will work if you thin out the mixture enough, however most pancake mixes containing raising agents that make the mix rise when cooked making pancakes rather than crepes.

    • Hi Alma, use plain flour.

    Hi Ann! I made a smaller version of this cake and I need to make a bigger version now of this cake. How many people would 25 crepes serve? I need to serve twenty. Thanks! :):)

    • Hi Ann, It really depends on how big a serve you wish to provide. If it is just a small snack size, then you usually would work on the basis of at least 2 crepes per person. Of course you can cut it like a cake rather than serving individual crepe. If it larger serving you are after then at least 4 crepes per person. I think 25 crepes would serve about 8-10 people.

    Hi Ann!!! I love cook cake and it was like i found a treasure in desert when I found out your website!!!!
    I want to ask i have done the crepe with different recipe two times but it does not look good and it was friable. I do not know the reason why. I assume there are two reasons because the recipe uses baking powder in it. second reason and this is the thing i am wondering as well, is the way we whisk the mixture make the crepe friable. I did put all the ingredients together then i mix them by electric mixer until it all mixed. So how long and which level of mixer i can mix: slow, medium or fast?

    • Hi Lan, I am not sure what you mean. If you used a a different recipe then I suggest that you use the one Ann gives above instead. If you are using a recipe that has baking powder init, it is not a crepe recipe at all. It is probably a pancake recipe or piklet recipe and wont work for this purpose, regardless of how it is mixed.

    • i dont think it really matters as long as u get it to the right consistency

  8. i am not aloud egg so can i leave it out instead? or can i just use water?

    • Hi Samantha, I am sorry but egg is essential in this recipe. You could look for an egg free crepe recipe but it will need something to bind the ingredients together.

      • i know that in some recpies you can use bannas ensted of eggs

    • Hi Brina, Fresh is always best but a day in the fridge will be fine.

    This may be a wierd question, but I am making a suprise breakfast for my mom and sister sometime soon. For the crepes, does it have to be 4% fat milk?? We usually only have 1% here, woukd that still work?? Thanks so much! By the way, Love your videos!! ?

    • Hi Ashlyn, a lower fat milk will still work though you will need to test it in the recipe and ensure you are happy with the consistency of the crepes. Perhaps use a little less milk (maybe a 1/3 to 1/2 a cup) when mixing your batter and check that the batter consistency. Test cook one and ensure it spreads thinly but holds together well enough. Only If needed add the remainder of the milk.
