Meringues Recipe

6 egg whites
300g (10.58 ounces) sugar
pinch cream of tar tar or a squeeze of lemon juice

Place all the ingredients on a bowl and whip on high speed until you get stiff peaks. Put into a piping bag with a piping tip of you choice and pipe swirls onto lined baking trays. Bake at 120C (248 degrees Fahrenheit) for 1 hour, times will vary depending on how large or small you pipe your meringues. They should be dry and crisp on the outside.

Honeycomb Recipe

365g (12.87 ounces) or 1 2/3 cups sugar
140g (4.94 ounces) or 1/3 cup glucose syrup
110mL (3.72 fluid ounces) or 1/3 cup water
1/2 teaspoon baking powder
1 teaspoon bicarb soda

Homemade Marshmallow Recipe

125mL (4.23 fluid ounces) or 1/2 cup water (swap for lime juice for lime marshmallows)
22 gelatine leaves
1/2 teaspoon vanilla extract
250g (8.82 ounces) sugar
160mL (5.41 fluid ounces) water
70g (2.47 ounces) glucose syrup

Line a tin with baking paper and spray lightly with cooking oil.

Cut the gelatin sheets in half and place into the water with the vanilla extract. In a pan put the sugar, 160mL (5.41 fluid ounces) of water and glucose syrup. Heat over high heat stirring until the sugar is dissolved. Pour mixture into the bowl of an electric mixer. Add the gelatin sheets with the water they were soaking in and stir until they are melted. Whip on high speed until the mixture is very thick, see the video for what it looks like.

Pour the marshmallow mixture into the prepared tin and leave at room temperature to set.

Once firm cut into desired shapes and sprinkle with icing sugar. Store in an airtight container.

Cookie Jar Ingredients

1 cup plain flour
1/2 teaspoon baking powder
1/2 cup sugar
1/2 cup brown sugar
1/4 cup coconut (or you can use almond meal if you prefer)
2 cups chocolate chips
1 cup pretzels

Instructions for recipient: Pour into a bowl and mix with 1/2 cup of melted butter. Place spoonfuls onto a lined baking tray and bake at 180C (356 degrees Fahrenheit) for 15 minutes.

    It’s because you put everything in the bowl at once.
    You have to add the sugar slowly after the egg whites are at least white instead of clear.

    I just found out that you have completed your first cookbook! Since I absolutely MUST have my own copy… I spoke to my husband. He’s 200% down to preorder and I am SOOOOOO excited 😊 We’ll receive it just in time for our annual stay at a magical cabin tucked in the white mountains of NH. We have gone there in rememberence of my Dad who passed away in 2013. So… I’m very confident that I will be able to create a magical desert for our gathering at his family cemetery. Morbid?     Hi, what can I use to replace gelatin leaves? I have powdered gelatin. What amount of powdered gelatin can replace 22 leaves of gelatin?

      Just expierement

    • I did some research and found you should use about 11 teaspoons, or 3 2/3 tablespoons for powdered gelatin!

    • One teaspoon = 1 Sheet of Gelatin.

    You may have not whipped it long enough. You also could have had some eggy yolk in the whites, had fat in the bowl. Next time make sure you clean the bowl with vinegar it will get rid of the fat. The same issue happened to me but I just kept whipping and it worked.IT could have been the brown sugar to you had to use white sugar. Hopefully, this helped you.

    I was cooking the meringues and 30 minutes in they were burning. Why is this?

      Yay! I just made the cookie jar mix for my nephews birthday present!
      I just had to alter the pretzel and choc chip amount to fit in the jar but I’m sure they will turn out fine. I also broke up the pretzels to fit more in.
      I also made it last night as a test run, doubled the mixture and added a bit of water to moisten them up to make them easier to mould and stay in shape. I also added sultanas to them. Delicious biscuits.

      Hi, I tried making the merengues recipe, I put 6 egg whites, 300 grams of sugar (brown/yellow) and a squeeze of lemon juice in a bowl, just like it says, then I tried to whip it on high speed, but all I could get was a cake dough like consistency, I ended up adding the yolks and some flour and baked a cake out of it, but I would really like to know what went wrong.

        I think its because you added the lemon juice since i think that youre not meant to have any liquids in meringues.

        • I don’t think you whipped it long enough. It can take awhile. Also, only use white sugar, as brown sugar is way too gooey and heavy.The lemon juice gives the whites stability. You can use cream of tartar, or even whip them in a copper bowl- the copper is acidic. But, the brown sugar was the culprit.
