Best Homemade Ice Cream Recipes

Do you ever find yourself peering through the glass at the ice cream shop wishing you could have a little taste of everything?  Now you can make your own ice cream, add an endless variety of flavours and sample them all. My favourite is the Roasted Strawberry ice cream recipe, the kids loved the Starburst Cherry and my husband thought the Green Tea flavour was particularly good.

I recommend using an ice cream machine as it results in a soft, smooth and well-aerated ice cream. If you don’t have one check out my earlier video on making ice cream without a machine.

Vanilla Cookie Dough Ice Cream Recipe

makes 1L (0.26 gallons)

cookie dough ice cream recipe reardon
400millilitres (13.53 fluid ounces) or 1 1/2 cups plus 2 Tbsp (4%) milk
6 or 90g (3.17 ounces) egg yolks
1 vanilla bean or vanilla essence
216g (7.62 ounces) or 1 cup sugar (super fine)
200millilitres (6.76 fluid ounces) or 3/4 cup plus 1 Tbsp cream

Cookie Dough
50g (1.76 ounces) or 1/4 cup butter
20millilitres (0.68 fluid ounces) milk (1 Tbsp plus 1 tsp)
160g (5.64 ounces) or 1 cup of flour
125g (4.41 ounces) or 1/2 cup plus 1 Tbsp and 1 tsp sugar
45millilitres (1.52 fluid ounces) or 3 Tbsp water
mini chocolate chips, as many or as little as you like. Go for it tip them all in.
 
 

Roasted Strawberry Ice Cream Recipe

makes 1L (0.26 gallons)

200millilitres (6.76 fluid ounces) or 3/4 cup plus 1 Tbsp (4%) milk
6 or 90g (3.17 ounces) egg yolks
216g (7.62 ounces) or 1 cup caster sugar (super fine)
500g (17.64 ounces) fresh strawberries
100millilitres (3.38 fluid ounces) or 1/3 cup plus 1 Tbsp cream

Wash and hull the strawberries and cut in half.  Place cut side down on non-stick baking paper and sprinkle with some of the sugar.  Bake at 165C (329 degrees Fahrenheit) for 15 minutes.
 
 

Dark Chocolate Gelato

makes 1.5L (0.4 gallons) (egg free)

600millilitres (20.29 fluid ounces) or 2 1/3 cup plus 1 Tbsp and 1 tsp (4%) milk
150millilitres (5.07 fluid ounces) or 1/2 cup plus 2 Tbsp cream
180g (6.35 ounces) or 3/4 cup plus 1 Tbsp and 1 tsp caster sugar (super fine)
50g (1.76 ounces) or 1/3 cup plus 1 Tbsp and 1 tsp skim milk powder
60g (2.12 ounces) or 1/2 cup cocoa powder
100g (3.53 ounces) dark chocolate
 
 

Matcha Green Tea Ice Cream

makes 1L (0.26 gallons)

16 matcha green tea bags used to make 300millilitres (10.14 fluid ounces) of tea
200millilitres (6.76 fluid ounces) or 3/4 cup plus 1 Tbsp (4%) milk
6 or 90g (3.17 ounces) egg yolks
216g (7.62 ounces) or 1 cup caster sugar (super fine)
100millilitres (3.38 fluid ounces) or 1/3 cup plus 1 Tbsp and 1 tsp cream
 
 

Starburst Cherry Ice Cream

makes 1L (0.26 gallons)

6 or 90g (3.17 ounces) egg yolks
54g (1.9 ounces) or 1/4 cup castor sugar (super fine)
400millilitres (13.53 fluid ounces) or 1 1/2 cup plus 1 Tbsp and 2 tsp (4%) milk
200g (7.05 ounces) starburst lollies
100millilitres (3.38 fluid ounces) or 1/3 cup plus 1 Tbsp and 1 tsp cream

Left over egg whites? Try one of these: salted caramel macarons, pavlova, chocolate pavlova or meringue cake

  3. Hi Ann. I love watching your channel. Thanks for all the lovely videos. I want to try the chocolate ice cream but here in South Africa we don’t get skim milk powder, we get milk powder. Can i use that instead?

  4. Sorry the other half of my comment just didn’t post so the machine still made a fluffy ice cream but when I put the ice cream in the freezer next day it was hard like rock ..   6. hi I’m trying the starburst one and I’ve all ready done the chocolate and my little sister love rainbow ice-cream the one with the blue colours in it how to make it and keep the colour from not mixing together into one colour.

  10. Hi Ann, just whipped up a batch of the roasted strawberry ice cream and I would have to say it is by far the creamiest, dreamiest ice cream I have ever tasted. I keep going back to the freezer to taste ( for testing purposes of course). I have a Breville stand mixer and decided to buy the ice cream maker bowl, it was well worth it as it turned out lovely and fluffy and only took 10 minutes to reach that soft serve stage, but I did let it go for 15 all up. What I like about your recipe, it doesn’t contain much cream yet has a lovely creamy mouth feel. I will try the other flavours and maybe make up some of my own. Thanks again and yum yum.

  13. Hey Ann, i was wondering for chocolate ice cream, can i use malt powder instead of skim milk powder??

    • i don’t think so as Malt powder is made from barley

    I will be attempting this recipe tomorrow. Does it matter what fat percentage the milk is?
    What would you recommend. Is Skim okay or 2% is recommended?

    • it will work but won’t be as creamy if you use skim milk

  15. Hi Anne, greetings from the UK! I love watching your YT videos, but being diabetic and grain-free I can’t make most of them due to the sugar/flour content :'( so I just sit and drool at the screen!
    I’d really love to have a go at your ice cream recipe though, but was wondering have you ever tried making it using a sugar substitute (Splenda for example)?
    My fave ice-cream is coconut and I was thinking about adapting your chocolate recipe, maybe using coconut milk to replace the milk and cream, some dark choc chips and shredded coconut (in place of the cocoa) to make a “bounty” ice cream – have you tried any alternative “milks” at all? My other thought was almond milk with choc chips and chopped nuts to make a choccy-nutty ice cream ~any ideas or tips?

    • Hi Sue, sorry I have always used milk and cream, so you’d have to experiment and see how it tasted.

      I have a breville mixer, the ice cream bowl comes separately as an attachment

  20. Rum and Raison is my fave. my mom once made some, using straw rum as this smell like the ice cream, forgetting that it is 70% proof and this lowers the freezing point.
