Cake Scraps Fudgy Brownie Recipe

When you make a large carved cake you end up with lot of off-cuts, which are known as ‘cake scraps’. This recipe turns these scraggly off-cuts into crazy, good, fudgy brownies. They are delicious served warm with ice-cream, or cold at any time of the day.

 

To make my cake scraps brownie recipe you will need:

Makes 25cm (9.84 inches) x 17cm (6.69 inches) brownie
100g (3.53 ounces) or 1/3 cup plus 2Tbsp margarine or butter, melted
2 eggs
1/2 cup or 108g (3.81 ounces) sugar
1/4 cup or 30g (1.06 ounces) cocoa powder
3 1/2 cups or 350g (12.35 ounces) cake crumbs
chocolate chips and nuts (optional)
Place the cake in the food processor to make crumbs. Add the remaining ingredients and process again until the mixture is smooth and thick.

Pour into a lined baking tin and sprinkle with chocolate chips and nuts. Bake in a moderate oven 180C (356 degrees Fahrenheit) until a knife inserted into the centre comes out clean.

    You just saved my night! My go-to chocolate cake recipe fell (!!), which has never happened before, so I gathered up the crumbs and made this! I added about 250 ml of water to the blender and it improved the texture of the batter.

    I want to try this recipe based on all the good reviews. I have a chocolate courgette cake that didn’t mix together properly and came out lumpy and uncooked in places. I just wonder could you clarify the first line of the recipe. 100g or 1/3 cup plus 2 tbsp margarine or butter. Is this 100g of margarine plus 2tbspn or 100g of something else that hasn’t been printed?
    Just seems slightly odd way of putting it. I don’t want to end up with another inedible cake due to my inept reading of the recipe! Thanks

    • I think the 2 tbsp of butter is melted for greasing the tins?? That would be my interpretation not sure though

      • Ann mentioned lining the baking tin but not buttering it. I assume she meant to line the tin with parchment paper and add the melted butter/margarine to the other ingredients. That is my understanding but I haven’t tried the recipe yet.

      I would assume that 100 grams is the same as 1/3 cup plus 2 tablespoons. Conversion from metric to US measurements always have a little leftover.

    Just ran across your idea!!! I had a graduation cake left over and a pecan pie that we didn’t like, tired of making bread pudding type dessert. So voila I added 1 more egg didn’t add sugar due the sugar in pie, and mixed it up baked it and out came the best brownies I think I ever made!!!!!

    I used offcuts from a rather heavy vanilla cake so the brownie came out a little on the greasy side but was delicious just the same.

    I blitzed up the cake, mint butter cream filling, chocolate fudge icing and all. I used 3 eggs instead of 2 and baked at 170C fan for 20 minutes. They have turned out lovely and gooey! I normally pride myself on the light nature of my birthday cakes, but used a different fat for my daughter’s b’day cake this year and it was sadly really dry, so I was really pleased to find this recipe to use some of it!

    How long do most of you normally bake them? I overbaked brownies so have crumbed them and added the ingredients. I would like soft, gooey brownies this time.

    • If you keep checking it with a clean skewer or knife you will know it is cooked when it c9mes out clean

    Hi Ann, I only just saw this great idea for using the cake scraps. Over the last few years, l’ve been giving them away to anyone who wants them. Sometimes Thére are quite big pieces like afte making flash mc queen or other cakes that I figure out by myself. Thanks for your serious work, and tremendous help with making our grandchildren happy, and me very busy. Hi to everyone else from france.

    • ? That is a good use of cake scraps, they are yummy just as is.

    I have few chocolate chip muffin that turned out a bit less sweet n dry.. can I use it for this.. do I need to add more coco powder.. I’ve already made it with Hershey’s in sweetened coca powder

    • Hi Dechan, yes you should be able to use them for this without a problem

    • Hi Adanmaya, you can make it as is, or if you prefer add an extra 2 tablespoons of cocoa powder add look at the texture – add the extra egg if it’s too dry. See the video for the texture that you are going for.

  15. Hi. I have lots of kilos of cake cutoffs. My cake batter was too much for the baking tin I used so by the time the cake was cooked inside the outside was burnt. To avoid wastage, I removed the burnt part and put the rest in airtight containers and put them in the freezer until I figure out what to do with it. It’s a vanilla cake. Can I use the above recipe to make a regular cake out of it again instead of the brownies. Please help.

    • HI MMC, You couldn’t make a regular cake, but you could do a blondie (that is a vanilla brownie) or make trifle.

    Thank you so much! I have been looking for a good use for my cake scraps for a long time, and this is it! I might add some baking powder next time, to make it a bit less dense. And thank you also for the metric measurements, us Australian bakers appreciate it!

  18. I have been given a ‘cake’ by a friend to ‘give to the birds’ It had been a failure. She forgot the sugar and I am sure she also forgot to put in Baking Powder Wonder if this would do? Maybe add extra sugar and some Baking Powder? Thanks

    • Hi Pamela, Adding extra sugar or baking powder won’t help but yes you could use it in this recipe. The result may be heavier but if you mix it with other cake scrapes you will barely notice.

  20. Hi! Im just wondering if I can still use a month-old cake for this receipe or I should just throw it out? We somehow forgot we have a cake in the fridge inside a disposable container and Im thinking if I could re-use it. Thank you in advance!!?

    • Hi Leah. A month in the fridge seems too old to me!
