This is the most fun dessert you’ll ever eat! Be prepared for some hilarious, almost musical, sound effects as your friends and family slurp back on the tubes. Then BOOM! A flavor hit all at once. Unless you’re running a Weight Watchers meeting, guests will definitely want more than one. These would be awesome at a cocktail party or wedding as a great conversation starter.

For this dessert you will need glass tubes, they need to be open at both ends so you can suck up the dessert (if you just use test tubes, your guests will not be able to eat the dessert). The tubes that I bought were 14mm x 1.5mm x 290mm, there are similar ones but a bit shorter here or there are heaps more sizes here.

Pavlova Dessert Tubes Recipe

Mini Meringues
2 egg whites
2/3 cup or 145g (5.11 ounces) sugar
1/4 cup or 63millilitres (2.13 fluid ounces) water
Heat the sugar and water over high heat until it reaches 115C (239 degrees Fahrenheit)
Whip the egg whites and with the mixers running add the hot sugar syrup.

Pipe tiny meringues onto non-stick baking paper and bake at 150C (302 degrees Fahrenheit) until dried out.
Cool and store in an airtight container.

Strawberry Jelly / Jello
100g (3.53 ounces) or approx 2/3 cup Strawberries
50millilitres (1.69 fluid ounces) or 3 1/2 Tbsp Cream

Root Beer Float Dessert Tubes

400millilitres (13.53 fluid ounces) or 1 1/2 cups plus 1 1/2 Tbsp root beer
2 tsp gelatin
Sherbet
Whipped cream

Thin Custard
275millilitres (9.3 fluid ounces) or 1 cup plus 1 1/2 Tbsp Cream
3 egg yolks
30g (1.06 ounces) or 2 Tbsp plus 1 tsp sugar
dash of vanilla
Add the sugar to the egg yolks and whisk well. Place the vanilla and cream into a sauce pan and heat until it just starts to boil. Pour over the egg yolks whisking as you do. Return to the pan for just a moment until it reaches 185F (85 degrees Celsius). Immediately tip into a bowl to cool. If you overheat this mixture it will curdle.

Kids Dessert Tubes

1 packet blueberry jelly / jello
1 packet jelly beans
popping sugar
whipped cream

Chocolate Custard
275millilitres (9.3 fluid ounces) or 1 cup plus 1 1/2 Tbsp Cream
3 egg yolks
30g (1.06 ounces) or 2 Tbsp plus 1 tsp sugar
dash of vanilla
200g (7.05 ounces) chocolate
Add the sugar to the egg yolks and whisk well. Place the vanilla and cream into a sauce pan and heat until it just starts to boil. Pour over the egg yolks whisking as you do. Return to the pan for just a moment until it reaches 185F (85 degrees Celsius). Immediately pour it through a sieve onto the chocolate. Leave to sit for 1 minute and then stir until smooth.

Lemon Meringue Pie Tubes

1 packet of lemon flavored jelly / jello
plain crispy cookies (I used tiny teddies)

Italian Meringue
2 egg whites
2/3 cup or 145g (5.11 ounces) sugar
1/4 cup or 63millilitres (2.13 fluid ounces) water
Heat the sugar and water over high heat until it reaches 115C (239 degrees Fahrenheit)
Whip the egg whites and with the mixers running add the hot sugar syrup and continue to whip until it is cooled.

Lemon Curd
makes 250millilitres (8.45 fluid ounces) of lemon curd
125millilitres (4.23 fluid ounces) or 1/2 cup lemon juice
Zest of one lemon
82g (2.89 ounces) or 1/3 cup plus 1 Tbsp sugar
1 egg plus one extra yolk
45g (1.59 ounces) or 3 Tbsp unsalted butter
Place all ingredients in a bowl except for the butter. Whisk together and microwave in 30 second bursts, stirring well each time until it is thickened. Stir in the butter and let it cool.

    • Hi Jazzy, If it is a strong plastic with a larger gauge than a standard straw, then it should work.

    • Hi Amber, You could replace the jelly with a cream or a custard or create a new layer. Think about what is small enough to put into the tube and will slide out with ease.

  5. Hi Ann I want to make them but don’t have access to glass tubes what else could I use so my dad has a fun dessert on his birthday

    • Hi Jed, the best option is glass tubes as the plastic ones are too narrow and you can’t get much in or out of them. You can get glass tubes easily by finding a glass blower near you. They have long tubes like this as part of their stock, so they can cut them to length and smooth the ends. You can find a glass blower through etsy.

  6. Hi Ann! I am allergic to dairy, but want to try this out, what suggestions do you have that i could try with my dietary restriction?

    • Hi Ethan, you could easily replace the cream in the Strawberry Pavlova tubes with a dairy free dessert whip. The root beer tubes also can be adjusted replacing the whipped cream in the same way and the cream in the custard with a soil milk or similar. Just experiment to find what you like best.

  8. Hi! Does it have to be straws of glass? What happens if you use paperstraws or plastic?

    I really want to try these, but I can’t afford the glasstubes.. 🙁

    • you could use plastic straws but they would have to be really wide to fit anything inside. I have seen big straws occasionally so if you can find them, then go for it 🙂

    • I ordered 100 pcs of clear bubble tea straws for about 3.70 off of Ebay and they came in today. They were for a different project but I am going to try making them with these straws as well because you can seal them closed so I can take them with me to a party. That was my idea at least but I’m not sure if it will work because the straws are a lot shorter but as we Dutch people like to say.. “Not shot is always missed”

      If it does work out well, I’ll write a follow up 🙂

    Hi! I love your recepies and I’m going to try this and some other desserts from this site for my boyfriends birthday. I have one question though. Do you think I could just buy tiny meringues instead of making my own? Do you think it would still be tasty? Thank you! 🙂

    • Hi Anna-Kaisa Karhu, You could have a look at what is available and small enough to easily put down the tube. We haven’t seen commercial meringues that small but if you do then they will work fine. There are lots of other candies and sweets that could work.

    Hi Ann I love your videos and I want to make the lemon curd because l’ve got a mini pie crust already made and I think it will be just perfect for it. Looks good and I just know it will taste good it will also make such a cute desert for guests. Best part is that I have all the ingredients! 🙂 XD

    • sorry im trying to find out so i can make them for my graduation from high school party

      • I’m sure she meant grams. mL is used for liquids, and since butter is a solid, grams are used.

    • Yes you could decrease the sugar in the lemon curd. But keep it the same in the italian meringue or it won’t work. You could also use diet lemon jello.

  19. Approximately how long do you cook the meringues for?

    • I am hopeless at writing down baking times, I write down when they went in the oven and forget to write down when I took them out. With meringues you are essentially just drying them out but you don’t want them to brown. Normal meringues take a couple of hours but these ones are only tiny so I think they took about an hour – but please check them as they are baking.
