Disney Cinderella Cake

Disney has a knack for making movies magical. In their latest film, Cinderella’s ball gown bounced beautifully as she descended the staircase. It glittered and shone as she danced with the prince and flowed dramatically behind her as she ran back to the carriage, revealing all those luscious layers of fabric. This Cinderella cake recreates the layers and complexity of that dress (for a fraction of the cost).

I saw Cinderella at Sydney’s State Theatre, a beautiful venue for such a movie. We were greeted at the door by ‘royal servants’ who, after checking our tickets, waved us through, saying: “welcome to the ball”. We walked up huge curved marble staircase into the old theatre featuring ornate decorations and chandeliers. Beautiful! The movie was magical but I also found it incredibly sad. There was not a dry eye in the place as her mum died, then her beloved father, which was of course, followed by the cruelty of the step mother. Hearing children sobbing around me was quite hard and my only hope is that it doesn’t spark fear in young hearts.

To make the Cinderella Cake you will need.

Cake:
1 1/2 x my sponge cake recipe baked in three round 8inch (20.32 centimetres) cake tins and one 1L (0.26 gallons) heat proof bowl with an 7.5inch (19.05 centimetres) diameter at the top.

Frosting:
Ganache
375g (13.23 ounces) compound white chocolate
120g (4.23 ounces) or 1/2 cup or 125millilitres (4.23 fluid ounces) cream
Boil the cream and remove from the heat. Add the white chocolate and stir until smooth and completely melted. Leave at room temperature overnight or place in a bowl in the fridge for 2 hours.
Buttercream
1/2 cup plus 1 Tbsp or 120g (4.23 ounces) Butter or margarine
2 1/2 cups or 315g (11.11 ounces) icing (powdered) sugar

Using an electric mixer cream the butter and icing sugar together until pale then add the cooled ganache and mix through until just combined.

Fondant:
1.2kg (2.65 pounds) white fondant (I had 425g (14.99 ounces) left at the end but it is easiest to work with when you have extra)
Violet, royal blue and green gel food colouring
Mix 1 kg (2.2 pounds) of fondant with royal blue and violet colouring to make her dress colour.
To make the ruffle colours take a small amount of the blue fondant that you’ve just made and mix some with different amounts of white fondant. Mix another bit with some green colour to make various shades.

Other:
9inch (22.86 centimetres) Cake board
White luster dust
Soft paintbrush
vodka to make luster dust stick the shoe if your doll doesn’t already have a glass slipper.
drinking straw
piping bag
ruffle tool
Tylose powder – makes fondant dryout quicker, useful for the frills

Level your sponge cakes.
Add a little bit of frosting to the cake board then add your first sponge cake.
Spread a thin layer of frosting. Add the next sponge cake followed by the bowl cake.

Cut a small hole down the centre of the cake and make a cut down one the side of the cake.

Add the doll with one leg forward. Using the smaller sponge cut a piece and shape it to fit in the gap at the front of the cake and add using frosting.

Cut two curves from the spare cake and add to the back of the dress.

Carve and shape the dress as shown in the video above.

Cover the cake in a thin crumb coat of frosting. Once that is set add another layer of frosting and smooth it out.

Make your frills using the fondant tool and add around the foot and the base of the dress.

Roll out blue fondant and make ruffles along the bottom edge. Drape it over the back of the cake lining up the frill at the base of the dress.
As it narrows at the top pinch it in and use scissors to cut off the excess. Using the same tool we used for the ruffles gently make indents in the fondant flowing in the direction of the dress.

In the same way add a piece of fondant to each side allowing it to bunch up a bit around the front frills.

Wrap a piece of fondant around the body smoothing it out at the back. Then cut another piece with a v shape of the base and add it to the front of the body. Once it is in place use your knife to cut the shape of the top of the dress. Add a couple of lines going up the dress on each side.
Repeat at the back. Make another frill, add it to the top of the dress and flatten it down in the centre.

Make butterflies as shown in the video and add to the top of the dress. Make another and add to the shoe.

Dust the dress with White luster dust using a dry paintbrush.

  4. Hi Ann! Thank you for a lovely video and cake 🙂 I was wondering. The buttercream frosting that you mix with the cooled ganache, can I colour the buttercream with food colouring?

    • Hi Celine, Yes you can. Ann recommends using gel colours if you are after a strong colour, otherwise the amount of liquid colour needed can have a detrimental effect. If it is just a pale colour you are after then liquid colour should be fine.

  19. can u plz tell me sumthin? in the chocolate secrets video, you used a technique- microwaving the grated chocolate. for that method should i use real cadbury milk block chocolates or real cadbury melts? both contain cocoa butter- can u plzzzzzz tell me the one u use/d?
