Double Rainbow Apple Pies

My husband declared these to be the yummiest dessert he’s ever tasted. If you take a moment to look under the desserts tab on this website you’ll realize that, in our house, is a big call. He is however slightly biased because he has always loved apple pies.

To make these double rainbow apple pies you will need:
Puff pastry
whole apples washed and optionally peeled
cinnamon (optional)

Colored pastry
320g (11.29 ounces) Flour
165g (5.82 ounces) Butter
Gel food colour

Melt the butter in the microwave, pour it into the flour and mix it together.
Once it looks like crumbs use you hands to squeeze it together and knead it lighty until it forms a ball.

Split you dough into 8 small portions colour using gel food coloring.

Custard Filling
3 egg yolks
60g (2.12 ounces) sugar
1 cup or 250mL (8.45 fluid ounces) milk
1 tsp vanilla
15g (0.53 ounces) cornstarch
1 tablespoon butter
Add the sugar and cornstarch to the yolks and whisk together.
Pour in the milk, vanilla and butter and mix to combine. Heat over medium heat, stirring continuously until it boils and thickens. Keep stirring while it bubbles for at least another 30 seconds. Remove from the heat.

Preheat your oven to 180C (356 degrees Fahrenheit).

Take a square of puff pastry and cut it in half to make two rectangles.

Place a snake of your yellow dough on a diaganol, then add your other colours alongside so you have stripes of colour.

Cover with the other rectangle of puff pastry and using a rolling pin roll it out lengthwise only.

Trim off one edge to make it straight then on on an angle roll the pastry so you end up with really long snake.

Take your rolling pin and roll it out lengthwise. Rub some water on top and roll it up. Carefully cut it in half using a sharp knife.

Roll one piece out into a circle. Core your apple and place it onto the pastry disc and pie custard in to fill the apple. Sprinkle with cinnamon (optional).

Wrap the pastry around the apple and squeeze to seal it. Flip it upside down so the sealed part is at the base.

Bake in a moderate over on a lined baking tray. Serve hot and enjoy.

    I loved making this with my 4 year old daughter. Lots of work but lovely end result! Very tasty and it looks gorgeous.
    Id also like to add that this is the single best custard recipe I’ve ever tasted. I consider myself a pretty decent pastry chef but my custard always fails. Too thick, too thin or too eggy. This one was extremely easy and the taste was perfect.

    We had a girls baking day featuring my mother, 4 neices, and me. It took all of us about 2 hours to make these not including oven time. Ann makes everything look easy when it is NOT! but we had fun trying and they were still delicious.

    • It says where the ingredents are it says preheat your oven to 356 C⁰ or 356 F⁰

    Hoping to make this really soon, they’re just beautiful!
    I have a question about the puff pastry. In the states we can buy premade traditional pie dough (usually comes circular so you can put it in a plate and trim edges, and you can buy what’s called “puff pastry” but it’s a lot puffier when it bakes up. So anyway I’m wondering what to use.

    • Hi Kate, Brands and types of pre-made pastry vary a lot, so if you want to use a commercial pastry you may need to experiment to see what works best. I would use a shortcrust pastry, rather than a puff pastry.

    My husband and I want to make these for our Easter dinner with the family. I love the idea but, how long do you bake it for?

    • Hi Jenn, It is something that will vary depending on how large you make them and your oven. I would say start checking from around 15-20 minutes.

    Does this whole recipe only make two apples? I don’t understand how to get the 8 apples covered ..thank you Ann. They are hirgeous

      I made the apple pies yesterday. The package of puff pastry I bought had two sheets in it. With one sheet and using barely half of the coloured balls of dough, I easily covered 4 apples. With the second sheet of pastry and remaining coloured dough, I will be able to make another 4 apples. The custard recipe would easily fill 8 apples.

    • Hi Lori, You cut your rainbow pastry into slices, then roll out a slice at a time to cover each apple. It should be enough to cover 6-8 apples depending on their size.
