Easy 2 Ingredient Chocolate Mousse Recipe

easy chocolate mousse recipe

The easiest chocolate mousse you’ll ever make. All you need is chocolate and water! Perfect when you need a dessert a hurry. Get started with the first step, throw it in the freezer and make your mains. Then whip this up and serve. Done!

Dark Chocolate Mousse Recipe

180g (6.35 ounces) dark chocolate
60mL (2.03 fluid ounces) or 1/4 cup water
Extra 70mL (2.37 fluid ounces) or 2 1/2 tablespoons cold water from the fridge

Milk Chocolate Mousse

180g (6.35 ounces) milk chocolate
60mL (2.03 fluid ounces) or 1/4 cup water
Extra 60mL (2.03 fluid ounces) or 1/4 cup cold water from the fridge

White Chocolate Mousse

180g (6.35 ounces) white chocolate
60mL (2.03 fluid ounces) or 1/4 cup water
Extra 40mL (1.35 fluid ounces) or 3 Tblsp cold water from the fridge

Place the chocolate of your choice and the 60ml of water into a bowl. Microwave on high heat on full power for 30 seconds, stir well. Heat for another 20 seconds and stir again. The mixture should be smooth with all the chocolate melted. If you still have unmelted chocolate give it 10 seconds more in the microwave.
Put the mixture into a plastic bag, seal at the top and flatten. Place in the freezer for 1 hour. Flattening it in the bag increases the surface area so it cools down more quickly than it would in the bowl.
Whip the chilled chocolate mixture on high speed using electric mixers until smooth and paler. Add a little of the cold water at a time.

Pour or pipe into glasses.  Refrigerate for at least 30 minutes and serve. Super easy!

  1. Hey Ann
I am new to this channel and am making this, but I have a problem. My mixture sat in the freezer for more than two hours, but it its still liquid. Especially the white one. I used exact measurements, but it is not working. Please help me!

    • Hi Smita, The type of chocolate you used may be effecting the result. The recipe works because of the balance of the 2 ingredients. If the chocolate is great quality it might cause this problem. With the white one you may need to add more chocolate or less water. The others might be salvaged by leaving them in the fridge overnight.

  2. Really disappointing – not sure what went wrong. I made it with Lindt Dark Chocolate 85% with warm water and stir under the double boiler. Turned out grainy. Did not melt like cream. May I get some help, please? Really want to surprise my daddy as he is coming home from a long long trip

I added boiling water to the chocolate and that worked just fine. I had to give it a 20 seconds in the microwave though. Other than that it seemed to work fine hope that helps!

      • Great tip KayKay

    • Hi Kelly without being able to see it , there are two possibles issues. You either burnt it or you it seized meaning you needed to add a little more water. Its the ratio of water to the chocolate that makes this work.

  3. Can i triple the recipe will it still work and what chocolate do you think works best??

    • Hi Hannah, just select a quality real chocolate. Brands and types differ from country to country, so we can’t recommend one. You can triple the recipe but be away that this recipe requires good management of the ratio of chocolate to water. Too little water and will start to seize on you. We recommend trying with the standard quantity first and getting a feel for what your chocolate will require.

Please make a rice crispie treats

  5. I placed the chocolate ganache in the freezer for an hour and it wasn’t thick like in the video, I added the right amount of water 🙁 should I leave it for longer??

    • Hi Shaddy, It sounds like something is not right. Ann suggests either leaving it in the freezer a little longer or perhaps adding a little bit more melted chocolate in case the proportions were out.

    Amazing

  7. Hi Ann,
This recipe looks awesome (I am sure it is). I am planning to serve this dish for Christmas. I have one question though. The amount of chocolate and water you gave above, is each mousse the amount of chocolate and water you have in the video? For example, up above it says three different mousses, milk, dark, and white chocolate. If I were to use the dark chocolate mousse, how many servings will there be? Will it be 4 servings like you said for one chocolate mousse or if you combine all of the chocolate mousses, will it be 4 servings?

    • Well, I made this recipe, and you guys said this will be 4 – 6. I only got one serving.
Very simple? Not really I made this for Christmas and this really disappointed me.

      • Hi Marcos, This recipe easily makes 4-6 serves as appears in the video. If you only got one serve it must have been a large one.

    • Hi Marcos, Using all ingredients you will get 4 serves as per the video.

    Hi Ann,
Thank you so mush for your great recipes,They are great to try out and they certainly delicious.
But I had a question for you,my question can we leave this mousse any longer than the 30 minute in freezer or fridge after putting it into the cups.
    If we can how long.

    • Hi Aneesa, It all depends on how cold your freezer is. You want to chill and set the chocolate and not freeze it solid.

  10. The more I beat, the more grainy it becomes. Wasted so much chocolate 🙁

    • Hi Rifat, if the chocolate is seizing you need a little more water.

Planning to make this for a food party in French class! How many servings does the recipe make?

    • Hi Holly, Ann made at least 6 generous servings but you could easily adjust the serving size by using smaller glasses or containers.

Damn it, why didn’t I think to look here when I was hankering for mousse but didn’t want to go to all the trouble the other day! Yum!

  18. Hi Ann!! Thanks for the great recipe

I made the dark chocolate one first (and added some orange zest) and it worked really really well. I tried to make another batch but while I was adding the cold water and whipping it, it started to become very grainy almost like when you overwhip cream. Is there anything I can do to fix this, or how do I prevent it?

    Thank you 🙂

    • Hi Shefali, were you using white choclate when it became grainy? This is more likely to happen with the white chocolate. Just use a little less water when working with the white chocolate.

I hope a how to cook that cake!

  20. I tried this but it just stayed a liquid what did i do wrong?

    • Hi Lindsey, it sounds like you didn’t chill the choclate for long enough.
