To make the emoji cheesecakes you will need

(makes 8 cheesecakes, my individual tin size was 3/4 cup or 190mL (6.42 fluid ounces))

Cheesecake base
200g (7.05 ounces) plain sweet biscuits
4 Tbsp or 52g (1.83 ounces) butter

Cheesecake Filling
720g (25.4 ounces) or 2¾ cups cream cheese
2/3 cup or 150g (5.29 ounces) sugar
5 tsp or 15g (0.53 ounces) plain or all purpose flour
2 eggs plus 1 egg yolk
1 tsp vanilla
5 tsp or 25mL (0.85 fluid ounces) cream
yellow food colouring

non-stick baking paper
compound milk or dark chocolate
compound white chocolate and blue and red oil based food colouring

Preheat your oven to 160C (320 degrees Fahrenheit)

Then to make the base put the biscuits into a bag and crush them with a rolling pin.

Tip that into the melted butter and mix in well.

If you are using a loose based tin place a piece of foil over the top and make sure it is up to the top on all sides. Then add the base back into the tin.

Place a scoop of crumbs into each tin then using something flat push the crumbs down into the base.

For the cheesecake filling place the cream cheese and sugar into the bowl of your mixer. And mix until it is smooth.

Swap to the whisk attachment and add in the eggs, cream, flour and vanilla. Whisk it on high speed until it is fluffy.

Add in some yellow colouring until you get that emoji yellow colour.

Pipe the mixture into the baking tins. Then tap each one on the bench to smooth out the tops.

Place them all into a large baking dish. Then carefully pour in some boiling water to about half way up the sides.

Bake for around 15 minutes. Keep an eye on them because you don’t want them to brown on top.

Once they are cooked let them cool then remove from the tins as shown in the video. If you are not using loose based tins you may need to place in the freezer for a couple of hours and then tip out.

To make the decorations print out emojis in the size of your desserts. Place a sheet of non-stick baking paper over the top. Pipe the decorations (see video for instructions). Add to the cheesecakes or serve to the table and let your friends make their own emoji.

    Thought it was a good recipe, it wasn’t as good as i hoped, but if you leave it in for 40 or so minutes, it tastes fine(i’m not a hater but its not really my new favourite recipe

    My daughter and I had a piece of The Cheesecake Factory cheese cake. And my son can’t have that since he is allergic to peanuts/tree nuts. So I have been looking for a good recipe. This one looks lovely but can you tell me the ingredients amounts for a regular size cheese cake?? My daughter who is 13 yo will help me make it… She decided to not be in GirlScouts because she never fit in with the groups and in place she would be making things at home. Thank you!

    • I made a regular sized cheesecake with these exact quantities and it turned out fantastic you don’t have to change any of the amounts, all i changed was that i cook it for 40 to 50 minutes

    • Hi, you can make calculation. if this is for 8 individuals of 190ml then it would be 190*8=1520ml so then see how many ml your regular size container has and after that, you can amplify or reduce the recipe by making the math with rule of three (I don’t know if it’s called like that. the one where if 1 book costs $3 then 4 books costs $12)

    • Hey so I made this recipe before as a whole cake and the only alternation that needs to be made is the baking time I usually put it up to 25 minutes but keep an eye on it due to oven differences

    Good morning, I have never made a true cheesecake before, but when I saw your recipe on the debunking of a crock pot cheesecake , it just so happens me and my daughter-in-law we’re looking for a good cheesecake recipe.   13. We really liked this idea for Ivy’s 11th birthday cake. We didn’t have the means to make the minis so we just went whole hog and recreated her favorite. Thanks for the great ideas. We also borrowed your chocolate lettering ideas and put them on the side of the cake. You rock!

    • Hi Vinya, Ann uses loose bottom tins from Bakers Secret but they don’t currently have them in stock. If you search online for round cheesecake pan with loose (or removable) base/bottom you should find a good range, often available in sets of 2 for the small pans.
