Basic Meringue Kisses Recipe: (makes approximately 1 ½ trays of meringues).
2 egg whites
65g (2.29 ounces) or 1/4 cup plus 1Tbsp caster (super fine) sugar
1 tablespoon icing or powdered sugar

Place your egg whites into the bowl of an electric mixer and mix on high speed until they are fluffy, then add in a little sugar at a time.  Next add in the super fine (icing) sugar. Continue to whisk on high speed until they have stiff peaks. Pipe onto non-stick baking paper and bake them in a low oven around 100C (212 degrees Fahrenheit) for 2 hours.

Lime Meringue Recipe
1 lime
green gel food colouring (optional)
Juice the lime and microwave the juice to reduce it to 1 tablespoon in volume.  Add to the basic meringue recipe.

Raspberry Meringue Recipe
1 cup or 140g (4.94 ounces) of frozen raspberries
2 Tablespoons or 30 millilitres (1.01 fluid ounces) of water
red gel food colouring (optional)

Put the raspberries and water into a saucepan, heat and stir. Once the fruit is broken down push through a sieve.
Microwave the juice to reduce it to 1 ½ Tablespoons.  Add to the basic meringue mixture.

Chocolate Meringues
1 Tablespoon unsweetened cocoa powder
40g (1.41 ounces) dark chocolate

Sieve the cocoa powder and finely chop the chocolate.  Gently fold into the basic meringue recipe.

Passion Fruit Meringues
1 small 170g (6 ounces) tin or 2/3 cup of passionfruit in syrup
yellow gel food colouring (optional)
Drain a tin of passionfruit and add 1 ½ Tablespoons of the syrup to the basic meringue recipe. Add yellow colouring if desired.

  1. Hi Ann! I want to try and make a mango and a pineapple, how would I be able to do that?

    • Hi Talia, these recipes each contain 1 or 1 and a half tablespoons of your chosen flavour. If you want to use a strong flavour like lemon or lime, you can use it as is. If it is milder then you ned to start with a larger quantity of fruit or juice and reduce it down to intensify the flavour. You could do this with pineapple ad or mango juice. Don’t add more than a tablespoon and a half to your meringue or the recipe wont work.

  2. Can you use any other fruit for the raspberry recipe

    • Yes, You could try any berry or fruit. Use a similar quantity of fresh or frozen fruit as a starting point. Only add a tablespoon and a half of your reduced liquid to the meringue mix.

    • Hi Isabella, yes you can, just follow the directions for raspberries.

  9. Can I use regular white sugar instead of caster sugar?

    • I had that question on the Pavlova Recipe. Caster Sugar is just white sugar ground a bit more finely. I put mine through a nutribullet for a few minutes and it worked fine.

    • Hi Hajo, you can but it might not be as smooth, caster sugar is finer – it may be called superfine sugar where you live.

    • I only have white sugar, but I made these. I put the white sugar in a food processor for a few seconds to make it finer. It worked, and the meringue mixture turned out looking amazing.

  11. Hello Ann ! Wonderful recipe which I’ll try in a bit. Can I use liquid food colour instead of gel or it will change the consistency of the marique ? Thankf for all the sharing x

    • Yes you can but don’t put too much

    • Hi Joanne, if you use a small amount it should be fine, if you want strong colours use the gel 😀

    • Make coffee and reduce it to one tablespoon, then add to regular mixture.

    • Hi Eileen, either 1 tablespoon of strong expresso or 1-2 tsp instant coffee dissolved in 1 tablespoon of hot water.

      How much mango did you use?

  14. If i were to make these, could i replace the lime for a lemon?

    • I assume you can I’m going to try right now but you probably can as sometimes I replace lemon for lime in lots of recipes

      • Hi I tried making lemon ones and they tasted amazing!

    • when I tried to make these it didn’t work because when I added the powder sugar It went flat it look like cookie icing help what did I do wrong

      • It was either over whipped or under whipped, if it was fluffy still but holding peeks it was under, otherwise it was over

      • Hi Micahela, had you already added the normal sugar and it was fine? If so I suspect your powdered sugar must have another ingredient in it like an emulsifier – check the packet ingredients. If it has nothing else in it then just whip for longer until it becomes stiff.

In your video you said to take a friend but I would take my mum because she’s helped me and believed in me whenever I’ve tried something new and fun and she is my number one supporter.     • You don’t have to live in Sydney or LA you just need to be able to get to Sydney or LA

    • Oh and you probably can try use chopped pralines to it she did say to be creative:)
