Basic Meringue Kisses Recipe: (makes approximately 1 ½ trays of meringues).
2 egg whites
65g (2.29 ounces) or 1/4 cup plus 1Tbsp caster (super fine) sugar
1 tablespoon icing or powdered sugar

Place your egg whites into the bowl of an electric mixer and mix on high speed until they are fluffy, then add in a little sugar at a time.  Next add in the super fine (icing) sugar. Continue to whisk on high speed until they have stiff peaks. Pipe onto non-stick baking paper and bake them in a low oven around 100C (212 degrees Fahrenheit) for 2 hours.

Lime Meringue Recipe
1 lime
green gel food colouring (optional)
Juice the lime and microwave the juice to reduce it to 1 tablespoon in volume.  Add to the basic meringue recipe.

Raspberry Meringue Recipe
1 cup or 140g (4.94 ounces) of frozen raspberries
2 Tablespoons or 30 millilitres (1.01 fluid ounces) of water
red gel food colouring (optional)

Put the raspberries and water into a saucepan, heat and stir. Once the fruit is broken down push through a sieve.
Microwave the juice to reduce it to 1 ½ Tablespoons.  Add to the basic meringue mixture.

Chocolate Meringues
1 Tablespoon unsweetened cocoa powder
40g (1.41 ounces) dark chocolate

Sieve the cocoa powder and finely chop the chocolate.  Gently fold into the basic meringue recipe.

Passion Fruit Meringues
1 small 170g (6 ounces) tin or 2/3 cup of passionfruit in syrup
yellow gel food colouring (optional)
Drain a tin of passionfruit and add 1 ½ Tablespoons of the syrup to the basic meringue recipe. Add yellow colouring if desired.

  3. Though I assume it would not be recommended, can I use a hand mixer to make my meringue?

    • You can, it would take longer though

  4. I made the lime ones today. It was surprisingly easy! After baking I’ve decided they could use more lime flavor, but they are yummy!

    I didn’t have baking paper, so I used foil instead. The bottoms ended up brown (as predicted), but they were really hard to get off. I was afraid to grease the bottom. I wouldn’t recommend foil.

    • grease the foil with shortening or a little oil or some butter
      they worked for me

  5. Do you think it’d be possible to make orange flavoured meringues?? If so, what measurements should I use??

    • The same as the lime i think should work

    • Yes definitely Amy. As mentioned in other comments below. You will need to use fresh juice and reduce it down to 1-2 tablespoons and add about a tablespoon to your meringue mix. You will have to experiment with quantities to obtain the level of flavour that you like as it will depend on how flavoursome the fruit is to begin with and how much juice it produces. Ann started with one lime and 1 tablespoon of the reduced juice gave a good flavour. She also tried 2 tablespoons worth but it was too intense a flavour. Perhaps try using the juice of one large flavoursome orange or 2 smaller ones, as a starting point.

    • Yes, just make sure they are airtight

  9. Can I use regular sugar instead of caster sugar?

    • Hi MB,
      You really need fine sugar for this recipe. We recommend using caster sugar or if you have a really good blender you could try putting normal sugar through it. The average blender won’t really do a good enough job.

    • I used normal sugar and they came out fine for me

  10. if u are making more than one flavor put the first merangue batch in the fridge while makig the next flavor becosue if you leave them out the get runny

    • Hi Bella, You could use milk choclate but it won’t have the same ‘chocolatey’ flavour.

  13. I’m thinking of making the raspberry or the lime ones for my mom, what piping tip did you use to pipe the meringue ‘batter’ onto the baking sheets?

    • I mean the Wilton number. Also, is it an open or closed star tip?

    • Hi Linda, Ann used 824 Ateco open tip.

    • Hi Jo,
      You can double the recipe but make sure your mixer bowl can hold that quantity once whipped!

  15. Is powdered sugar the same as caster sugar? I don’t know if I can substitute it , which brings me to another question, What brand of castor sugar do you use? I bought a bag of powdered sugar and it tastes like the plastic bag it came in, it just has a plastic taste to it.

    • Hi Leslie, powdered sugar is like icing sugar it is very fine. Caster sugar is also called superfine sugar. It looks like normal white sugar but about half the crystal size.

    • Hi Cola, I don’t see why not, others in the comment here have made them with mango
