Valentines Day is just around the corner so how about giving these ‘surprise’ heart cupcakes a try.  Unlike most love-heart cupcakes, where you have to cut at a specific point to see the design inside, these little beauties will show your heart no matter which side you bite.  So whether you’re making them for a good friend, or someone you hope will become a good friend, you’re guaranteed to get a big smile.

Heart Cupcake Recipe

2 cups or 320g (11.29 ounces) plain all-purpose flour
1 1/2 cups or 330g (11.64 ounces) sugar
1 Tbsp baking powder
1 tsp salt
1 1/2 tsp 7.5g (0.26 ounces) gelatine powder
1/2 cup or 92g (3.25 ounces) vegetable oil, such as canola oil
7 egg yolks
1 cup or 250millilitres (8.45 fluid ounces) cold water
252g (8.89 ounces) or 7 egg whites
1/2 tsp cream of tartar
(and later 1 tsp water and gel food colour)

Place your flour, sugar, baking powder, salt and gelatine into a bowl and stir with a whisk.
Make a well in the centre and add the yolks, oil and water, but do not mix.
In a separate bowl whip the egg whites and cream of tartar to soft peaks.
Beat the flour mixture on low speed until just combined.
Fold the egg whites into the flour mixture in 3 batches.
Fill three cupcake cases and bake for 10-15 minutes at 180c.

Crumbles those three cupcakes and add food colour of choice, 1 tablespoon of cake batter and 1 tsp water (or flavouring or juice of choice). Mix well to combine.

Watch the video for instructions on how to shape into a 3D heart and keep it upright in your cupcake.
Cook the assembled cupcakes at 180c as per the video tutorial instructions with initial bake of 4-5 mins, plus another 5-7 minutes once the heart center has been added.
This recipe makes 18 cupcakes with the heart center.

  2. Hi. I was wondering if you are allowed to use the mixture as a cake mix or if I am allowed to use a cakebox mix but do the same procedure?

    • Hi Esther, you could but you will need to experiment with the quantity of cake that you add back into the mix.

  3. I made these for Valentine’s day…I used almond extract to flavor the hearts…and they are AMAZING!! Thank you for the tips and recipe! Any chance you have nutritional information? I know…probably shouldn’t even want to know with desserts, but I have friends who “track” everything and I was hoping to provide the info for them.

    • Hi Skm, Sorry I don’t have that info for you, but you could find out using a simple web search using the ingredients listed.

    • Hi Fauve, You could use a boxed cake mix but you will need to experiment to ensure you have enough batter.

    • Hi Abby, the texture is much better if you have these ingredients and the shapes hold more effectively. You can leave the gelatine out if necessary.

  13. Hey Ann!!!! By the way it seems like I’ve only eaten the ones that didn’t have a heart shape coz I tried another one right now and this one had a heart!!!! Oh! And I forgot to ask you but what is the oven temperature for this recipe? I couldn’t find it so I just did it in 180 degrees Celsius.

  14. Hi Ann!!! I tried making these cupcakes and it turned out…pretty bad. I only used 5 eggs because that was what I had at that moment and it didn’t cause any trouble, the batter looked the same as yours but the thing is the heart didn’t work. I didn’t have a cone shaped item so I used a piping nozzle which was shaped kind of like a cone but it didn’t work. Mine just turned out as a circle…
    By the way I just LOVE your channel and you totally got me into cooking!!! Thank you soooooooooo much!!

  16. Hey Ann I’d love to make some of these cupcakes for a very good friend, but he and I, we don’t eat gelatine, do you know Agar Agar? Could I use this instead of gelatine? If yes, do you know how much of it? Also I’d like to know…how many muffins do you get out of the mixture…12 or 18 muffins?

    • Yes, I think you can use agar. I’ve tried it and it works perfectly fine. The difference between aspic and agar gelatin being that agar needs to be brought to a boil before it sets.

    • 4 if small, 3 if large if they are in the middle then I’d go 4
