Valentines Day is just around the corner so how about giving these ‘surprise’ heart cupcakes a try.  Unlike most love-heart cupcakes, where you have to cut at a specific point to see the design inside, these little beauties will show your heart no matter which side you bite.  So whether you’re making them for a good friend, or someone you hope will become a good friend, you’re guaranteed to get a big smile.

Heart Cupcake Recipe

2 cups or 320g (11.29 ounces) plain all-purpose flour
1 1/2 cups or 330g (11.64 ounces) sugar
1 Tbsp baking powder
1 tsp salt
1 1/2 tsp 7.5g (0.26 ounces) gelatine powder
1/2 cup or 92g (3.25 ounces) vegetable oil, such as canola oil
7 egg yolks
1 cup or 250millilitres (8.45 fluid ounces) cold water
252g (8.89 ounces) or 7 egg whites
1/2 tsp cream of tartar
(and later 1 tsp water and gel food colour)

Place your flour, sugar, baking powder, salt and gelatine into a bowl and stir with a whisk.
Make a well in the centre and add the yolks, oil and water, but do not mix.
In a separate bowl whip the egg whites and cream of tartar to soft peaks.
Beat the flour mixture on low speed until just combined.
Fold the egg whites into the flour mixture in 3 batches.
Fill three cupcake cases and bake for 10-15 minutes at 180c.

Crumbles those three cupcakes and add food colour of choice, 1 tablespoon of cake batter and 1 tsp water (or flavouring or juice of choice). Mix well to combine.

Watch the video for instructions on how to shape into a 3D heart and keep it upright in your cupcake.
Cook the assembled cupcakes at 180c as per the video tutorial instructions with initial bake of 4-5 mins, plus another 5-7 minutes once the heart center has been added.
This recipe makes 18 cupcakes with the heart center.

  2. Could you use sunflower oil for this? Or olive oil? Can you make them a day in advance?

    • Hi Hans, you can but the stronger the flavour of the oil the more likely for it to impact the flavour of your cake. I would avoid the olive oil.

  3. Hey you can also make the cupcakes with gelatine leaves?

    • Hi Annelies, Ann hasn’t tested this but it could be possible, however it is much easier to blend the powder in evenly and get a good result.

  4. We made these together, Ivy & I, over the weekend. We were very happy at how they turned out. We had to learn along the way and our first hearts were put in with the batter to wet, but in the later batches the hearts turned out straight up and down. So fun! Thanks Ann 🙂

    • Yeah you can but it won’t be as light and fluffy. 🙂

    • Hi Ash amisha, You can replace the gelatin with halal gelatin if you prefer. You could leave it out but the results will be much better if you use it.

  6. Hi. I am going to make these but 7 eggs sound like a lot. When I made a batter with 3 eggs the taste turned out eggy and they didn’t taste that good. I’m not so sure but I would want to know if this cupcake tastes eggy. Also cane I make a cone shaped tool using paper? Thanks! This is such a creative idea.

    • Hi Cookie, If the recipe is cooked properly it wont taste eggy. The recipe uses only egg whites that don’t have an eggy flavour.

  7. Hi Ann! The cupcakes look lovely and I’m surely going to try my hand at these! But is it possible to avoid oil?

    • Hi pooja, the oil helps keep these cup cakes lovely and moist. If you replaced the oil it would need to be with another fat and the calorie value wouldn’t change greatly. As long as you use a vegetable oil you will be using the best type of fat for this recipe.

  8. Hi Ann! Because the egg whites were folded in the mixture, i wondering if i leave the batter outside for 10-15′ to bake the heart, will it ruin the bubble in the cake batter?

    • Hi Truong, the recipe works quite well. Of course the longer you leave the cake batter to sit, the risk is that it will lose some of it’s lightness. Given these cupcakes have a more ‘solid’ centre it is unlikely to dramatically impact results if its just a 10-15 minute wait.

    • Hi Kat, Ann can’t guarantee that it would work with other recipes. You would have to test it out.

  15. Hi Paola, In principle the recipe should work well with a chocolate coconut cupcake. Just be aware that the red heart centre won’t be so distinct against a dark cake. You may wish to adjust the colour of the centre to may be a pink or white.

  17. I made them with shapes like triangles, squares and circles in a blue color… After they cooled down, we ate some and they hadn’t kept their shape! they were all like semi- circles. why?

    • I also would love to know this. Or could we do half milk half water?

      • You can but of course with milk the results will be better.

    • According to my converter app, 160 degrees celcius = 320 fahrenheit. So i’d say 320.
