Take the stress out of Christmas dessert. Make this cheesecake ahead, freeze it and defrost it in the fridge on the day you need it. Piled high with gooey mars bars, chocolate brownie and ganache, it’s sure to leave everyone wanting more.
I don’t feel ready for Christmas.  The school holidays have begun.  Here in Australia we have a long school break over December and the start of January.  I know this of course and should be well prepared, but I’m not. I have not finished shopping for gifts. In fact I have hardly started, but I do have dessert planned.

 

For the brownie you will need:

Preheat the Oven to 180C (356 degrees Fahrenheit)
100g (3.53 ounces) or 1/2 cup butter or margarine
2 eggs
1 cup or 250g (8.82 ounces) sugar
1 tsp vanilla
3/4 cup or 120g (4.23 ounces) self raising flour (if using plain flour add 1 tsp of baking powder)
1/4 cup or 30g (1.06 ounces) cocoa powder
1 cup or 150g (5.29 ounces) white chocolate and dark chocolate melts

To make the cheesecake you will need:

2 Tbsp gelatine powder dissolved in 1/3 cup cold water
750g (26.46 ounces) or 3 cups cream cheese

1 cup or 218g (7.69 ounces) sugar

3/4 cup or 188mL (6.36 fluid ounces) (4% fat) milk

3/4 cup or 180g (6.35 ounces) (35% fat) cream, whipped to soft peaks

To decorate:

90mL (3.04 fluid ounces) or 1/3 cup plus 2tsp (35% fat) cream

200g (7.05 ounces) chocolate

mars bars or other chocolate bars x 3

  2. With what can you substitute cream cheese?
    Here in Holland it is quite expensive (10€ per 1 kg)
    Can I use full fat quark instead? thou its quite runny, compare to the cream cheese…

    • Hi Cassie, We haven’t tried Quark as a replacement for cream cheese. As it is a curd cheese it may not be ideal in this recipe, though I know some people use it in European cheesecakes.. There are some recipes online for making your own cream cheese. That might be something you could experiment with.

  4. Mesurments are all wrong for example 1 cup of sugar is 200g not 250g.
    But the cake looks amazing!

    • Hi Kelly, Ann doesn’t rely on common measurements. We weigh all the ingredients ourselves and check them , as we have found there is a lot of confusion due to different countries using different measures. Australian and US cups are quite different. You can rely on the measuremnts Ann has given.

  5. How big does the tray that the brownies get baked in have to be, and will the chocolate melts actually melt in the brownie mixture, because I previously tried chocolate melts (they were the nestle ones) in a different brownie recipe and it didn’t melt.

    • Hi Stella, unfortunately what is sold as ‘melts’ vary from country to country. If they are real chocolate they should melt. There are melts or bits sold for baking that are designed to hold their shape (for cookies etc), so read the packet info so you know what you have got. In terms of a baking tray Ann used a standard rectangular tray. These are usually around 15″ x 10″ .

  7. Hello from Brazil Ann! I’m in love with everything you do, I’d like to thank you so much for this absolutely awesome site, the videos, everything… Plus, you’re so enjoyable to watch! Anyway, I do have a pressing question tho, I know this post is kinda old, but I do hope you get around to answer.
    Can I just chill this overnight instead of freezing?

    • Hi Sam, For stability, decorating and ease of serving it is better to freeze the cake. You could refrigerate but you may find the layers unstable depending how the cheesecake has set and the room temperature.

    • Hi Cutiepie Art. It will be easier with a stand mixer but You can use a hand mixer.

  13. Hey, I’m going to make this cake as a birthday cake for a friend. I have the list of ingredients but it doesnt say how long I have to bake the Brownie.

    • If you watch the video on her youtube channel she says to bake the brownie for 15 minutes. Keep an eye on it though, i just baked some of these brownies and it took a little longer for them to be ready, but they turned out delicious. Hope I helped!

    • Hi Naomi, The video explains that you need to cook it for about 15minutes approximately, but cooking times will vary depending on your oven. Make sure it is cooked as explained in the video.

    • Hi Yanilka, Ann used a plastic storage container that was about 14cm tall and 17cm in diameter.

    • Hi Mary, The container Ann used is about 14cm deep and 17cm in diameter.

    1. How tall the container must be?
    2. If I don´t have chocolate buttons can I chop some chocolate and use that for the brownie?

      • Hi Anki, 1 cup of chocolate melts is approximately 150g.

    • Hi Anki, Yes you can just use chopped up chocolate. The container Ann used is about 14cm tall.
