Rainbow Cake
Here’s a super easy rainbow cake that is bright and fun for a rainbow themed party.
To make this rainbow cake you will need:
Serves: 8
Three quantities of the basic buttercream recipe
Three 20cm (7.87 inches) round cakes of your choice.
To make three of the sponge cakes make one and a half times this perfect sponge cake recipe.
1/2 cup of filling if desired (I used this lemon curd with the addition of 1 tablespoon of flour whisked into the lemon juice). You do not have to use a filling you can just put buttercream between the layers.
Liquid food colour in blue, green, yellow and red.
Make your buttercream and then divide two thirds of the buttercream into 5 bowls and colour blue, green, yellow, red and orange (combine a tiny amount of red with yellow).
Place the buttercream into ziplock bags and pipe as shown in the video above

Dear Ann, this cake is planned to be my son’s birthday cake. I will use this recipe, but I want make the sponge cake inside as a rainbow cake as well, with five layers of the colors of the frostings. My question, is this sponge recipe suitable for making 5 cake layers and bake them separately (I have a small oven), will the dough last until the last part baking? Thx, Katalin
