Recipe for home-made fondant (sugar paste)

Fondant Recipe Ingredients

1/2 cup or 176g (6.21 ounces) glucose syrup
1 tablespoon or 15ml glycerin
1 tablespoon or 14g (0.49 ounces) gelatin
1 tablespoon or 15ml water
900g (31.75 ounces) or 7 cups plus 2 Tbsp pure icing sugar
Extra 1-2 teaspoons of water as needed

Fondant Recipe Directions

Place the glucose syrup and glycerin in a heatproof bowl.
Sprinkle the gelatin over the top and then add the water. Leave the mixture for 1 minute for the gelatin to swell and soften.
Microwave for 30 seconds, stir and repeat until mixture is clear.

Sieve icing sugar into large mixing bowl and pour in the glucose mixture.
Mix on low speed with electric mixer using a dough hook. If needed add the additional 1-2 teaspoons of water.

Once it forms a ball in the bowl tip onto the bench and continue to kneed until smooth.

If not using immediately wrap in plastic and then store in a ziplock bag.

    Is it become hard or solid.?

    • Hi Anuja, It should not become hard or solid if stored correctly. If it is left out in the air it will dry out.

    • Hi Tamir, you can just add the liquid straight away.

    • Hi CG, It looks like you needed more water or a little less powdered sugar during the mixing phase. Try that next time and see how it goes.

  7. hi, i can not locate Glycerin in any of my local supermarkets. is there something i can use as a replacement? and not corn syrup as its not available either. thanks.
    Or would the marshmallow fondant work on the construction cake just as well?

      I live in France and I found my glycerin in the pharmacy. May be It’s the same in US.

    • Hi Renee, commercial fondant is easier to use, but if you want to make your own, you can get Glycerin from cake decorating stores and pharmacies. You can easily order it online in most countries.

  9. Hi ann,,i tried your recipe twice,but still its breaking,why is it not flexible??.i almost used all the ing..maybe its my gelatine? Or what?

    • Hi Krizzy, the quality of ingredients vary greatly. Homemade fondant is usually less tolerant than commercial fondant as they add additional ingredients to keep it flexible. You could adjust the quantities t make your home made fondant more flexible, mix in some margarine. In the USA a lot of people would use crisco.

  10. Hi, I was wondering if I can substitute the gelatin with Agar Agar due to religious reasons.

    • Hello Nadia,
      I am a vegaterian so don’t use normal gelatine. I use vegetable gelatin, maybe you could try that.

    • Hi Nadia, the best alternative is to use Halal gelatin which is not an animal product.

    • Hi Rahma, We have found that you can buy pre made fondant in Kuwait. We have subscribers that have bought it at Lulus Hypermarket. Not being from the area, we can’t give you a specific store in your area, so try an online search.

  13. Hi Ann wanted to know how long it would last in a air tight container and can you put it in the fridge if so for how long and can you freeze it or would it turn sticky. thank you

    • Hi Lilz if you keep your hands really clean during the making process, the fondnat will keep for about a week at room temperature as long as it as stored as indicated on the blog. If mold or other contaminents get into the mix you will see it on the fondant in a cople of days. You could also freeze it and it should keep for longer that way.

    • You may not be able to buy it fresh, but it is easy to find the powder in most supermarkets, eg. coles, woolies, wall mart etc

    • Hi Jennel, Yous should be able to source food grade glycerin at a cake decorators store or sometimes a chemist/pharmacy.

  18. What if I need a lot of fondant? what measurements will i use?

    • Hi Riddhi. if you need a large quanitiy of fondant you can purchase it from a local supplier or simply multiply the ingredients to make the quantity you need.

  19. If we wanted to color the fondant, would we add food coloring? If so then when?

    • Hi Jonalyn, Are you using the glycerin? This makes it more flexible. Commercial fondants have other commercially available products in them too to make them more pliable.

        • In my country glycerin can be bought in pharmacies 🙂
