Spaghetti Birthday Cake

I get lots of requests for easy birthday cakes, this one is so easy that my kids made it for their dad’s birthday. His favourite meal is spaghetti and his cake of choice is carrot cake.

Spaghetti Birthday Cake Recipe

Carrot cake:
This makes two small cakes, 1 whole one for the cake and 1/4 of the other one for the sauce and so you will end up with some spare. So instead, you could use a bigger bowl to make the one for cake bigger, using most of the mixture and bake a little one separately for use in the sauce.
2 cups or 210g (7.41 ounces) (approx 3) grated carrot
2 or 100g (3.53 ounces) eggs
1 cup or 216g (7.62 ounces) castor (super fine) sugar
1/4 cup or 63 millilitres (2.13 fluid ounces) oil
1 tsp vanilla
1 1/4 cups or 200g (7.05 ounces) flour (all purpose)
2 tsp cinnamon
2 tsp mixed spice
1 tsp baking powder
2/3 cup or 167g (5.89 ounces) walnuts
1 Tablespoon chopped glace ginger (optional)

Mix together the oil, eggs and sugar in a bowl. Mix in the remaining ingredients and mix until just combined. Divide between two greased bowls or one larger and one smaller bowl. Microwave on high for 5 minutes. Allow to cool

Cream Cheese Frosting:
1 quantity of the cream cheese frosting Recipe. This will make more than you need but you can use the leftovers on the spare cake.

Spaghetti Raspberry Sauce:
1 cup or 140g (4.94 ounces) frozen raspberries
Juice of 1/2 a lemon
40g (1.41 ounces) white chocolate
yellow food colouring (optional)
1/4 of one of the carrot cakes (or the small one)

‘Meat balls’:
5 Ferrero Rochers

‘Parmesan Cheese’:
30g (1.06 ounces) white chocolate

  3. Hi, love the youtube channel, the recipes are just so out of the box and interesting to watch. Also, love that I’m watching an Aussie for once!!! Not against America but gotta love your own hey 🙂 (sorry, just rare for me to see yay)

    So, I’m going to make this cake for a pasta loving friend’s birthday but will need to take it to work and have it at lunch – does it need to be kept in the fridge and if so, do I need to let it raise to room temperature before serving it?

    • Hi Vivienne, as this is basically a carrot cake, it shouldn’t need to be refrigerated but should be kept cool. If it is going in the fridge then yes take it out about 30mins before serving.

  4. My grandmother is Italian and it’s a tradition to make spaghetti and meatballs every Sunday, and make either spaghetti, lasagna, or stuffed shells on every holiday. I saw this and figured it’d be perfect for her, especially since I wanted to something special for her 90th birthday this year! I ended up using boxed cake mix, which took an hour to cook because my oven is awful, and was baked in a bowl pan which I then trimmed. For the spaghetti, I used a small (about 2 mm) piping tip, and I used generic chocolate truffles for the meatballs.

    At first, my grandmother’s reaction was “How am I supposed to eat all this? We just went out for dinner! Did you actually make me spaghetti? I thought you said you’d made a cake!” At that point, everyone was laughing and I told her that it was actually just a cake. My aunt took pictures and sent it to the whole family, and everyone who had it thought it tasted great, though the raspberry sauce was a little bit out of place on the carrot cake and cream cheese frosting.

    If I were to try this again (which probably won’t happen because of how time consuming it is), I would probably make a vanilla cake instead so that the flavors matched a bit better, and any small spots that the frosting didn’t cover would be easily missed.

    • Hi Juliana, you could do this in the oven (moderate) until cooked through.

  6. Made this today for my boyfriends Birthday and he loved it! I replaced the Rocher’s with mini brownies(with some white choco chips mixed in to add a little colour), it is soooo yummy!

  7. Hi, I was just wondering can you suggest another type of icing other than cream cheese that you could use for this cake, that would still be thick enough and hold the shape, as I am making the cake for someone who doesn’t like cream cheese icing.
    Thanks for providing so many inspiration ideas, I cannot make them all but enjoy just simply watching you create the masterpieces.

    • Hi Mari, Using chilled buttercream is probably the best option.

    • Hi Laura, You could use your cake of choice. Carrot cake was used here because it was the recpient’s favourite.

  10. Hello Ann, I was wondering what you could use if you don’t have the mixed spices. Can we substitute it for 2 more teaspoons of cinnamon? We can’t find mixed spices in our store. Thanks!

    • Hi Jo-Angela, you can leave the cinnamon out it just adds to the flavour but is not needed for the cake to work

    • I should also mention I used a brownie instead of carrot cake, and strawberry jam with a bit of lemon juice. It was tasty, just not nearly as pretty as yours

  16. What kind of oil did u use? N what do u mean by mixed spice??

    • Mixed spice is a blend, you can find it in spices isle at a local supermarket, it should say mixed spice on there, I think that’s what Anne means.

    • Hi nora, I use canola oil. Mixed spice is bought mix of cinnamon, coriander, nutmeg, pimento, ginger, cassia and cloves.

    N the cream cheese frosting can be substitute for white chocolate ganache
