This washes down the splashes of sugar from the edges so they do not burn.<\/p>\n<p><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5499914220504552546\" src=\"http:\/\/1.bp.blogspot.com\/_NEIAWf-psE8\/TFOe2ABLFGI\/AAAAAAAAAFY\/f5Fhx9dwChs\/s320\/100_3485.JPG\" alt=\"\" border=\"0\" \/><\/p>\n<p>Then leave on high heat without stirring, until it JUST begins to brown in one spot. N.B. on gas stove tops this is likely to be at one edge, on electric it is likely to be in the middle. This will take about 5 minutes but keep watching it as timing is crucial. If you add the bicarb too early it won&#8217;t set, too late and it will taste burnt.<\/p>\n<p><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5499917837075050258\" src=\"http:\/\/1.bp.blogspot.com\/_NEIAWf-psE8\/TFOiIgyxbxI\/AAAAAAAAAFw\/6bDBIJHMtpo\/s320\/100_3490.JPG\" alt=\"\" border=\"0\" \/><\/p>\n<p>As soon as you see a light golden patch remove from the heat, stir a couple of times with the whisk to evenly distribute the heat. Then sprinkle in the bicarb and baking powders<\/p>\n<p><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5499917845129451090\" src=\"http:\/\/2.bp.blogspot.com\/_NEIAWf-psE8\/TFOiI-zF1lI\/AAAAAAAAAF4\/a51rjGAeI54\/s320\/100_3492.JPG\" alt=\"\" border=\"0\" \/><\/p>\n<p>Stir about three times with the whisk until just combined. It will start to bubble but still looks too pale for honeycomb &#8211; don&#8217;t worry it gets darker in the bowl.<\/p>\n<p><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5499914199418741890\" src=\"http:\/\/4.bp.blogspot.com\/_NEIAWf-psE8\/TFOe0xd7JII\/AAAAAAAAAFA\/elCXIBcx2oE\/s320\/100_3493.JPG\" alt=\"\" border=\"0\" \/> <\/p>\n<p>Do not over stir. Pour immediately into the lined bowl.<\/p>\n<p><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5499910572481009522\" src=\"http:\/\/1.bp.blogspot.com\/_NEIAWf-psE8\/TFObhqElV3I\/AAAAAAAAAEQ\/MCRTG36R6vI\/s320\/100_3497.JPG\" alt=\"\" border=\"0\" \/> <\/p>\n<p>Leave for about three hours to cool right through &#8211; this is the hardest part, as the smell of honeycomb wafts through the house. Everyone wants to eat it now!
