Everyone gathers around, plates at the ready as we chop huge, delicious slices for everyone &#8211; the kids&#8217; laughter flowing almost as quickly as the sweet watermelon juice.<\/p>\n<p>This gorgeous Watermelon Cheesecake Dessert is out just in time for International Watermelon Day on August 3. If you have a food processor you can use that instead.<br \/>\nMelt the margarine in the microwave or on the stovetop then pour in the biscuit crumbs and the food colouring. Make a space around the edge for the green.  <\/p>\n<p>Take a small handful of green and squeeze it together to make it stick together, squash it and then press it onto the side of the tin.<\/p>\n<p><strong>Cheesecake<\/strong><br \/>\n10g (0.35 ounces) or 2\/3 Tbsp powdered gelatin<br \/>\n25mL (0.85 fluid ounces) or 2 Tbsp room temperature water<br \/>\n250g (8.82 ounces) block or 1 cup cream cheese<br \/>\n1\/3 cup or 75g (2.65 ounces) sugar<br \/>\n1\/4 cup or 65mL (2.2 fluid ounces) milk (4% fat)<br \/>\n1\/4 cup or 65mL (2.2 fluid ounces) (35% fat) cream (<a href=\"https:\/\/www.howtocookthat.net\/public_html\/cream-use\/\" title=\"What cream should I use?\" target=\"_blank\">FAQ: What cream should I use?<\/a>)<\/p>\n<p>Add the gelatin to the water and stir well, then set aside to allow it to absorb the water.<\/p>\n<p>Whip the cream to make soft peaks then set that aside.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.howtocookthat.net\/public_html\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon-550x309.png\" alt=\"watermelon dessert recipe ann reardon\" width=\"550\" height=\"309\" class=\"aligncenter size-large wp-image-34757\" data-wp-pid=\"34757\" srcset=\"https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon-550x309.png 550w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon-300x169.png 300w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon-60x34.png 60w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon-400x225.png 400w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-ideas-ann-reardon.png 1863w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Beat the cream cheese with electric mixers until it is smooth, then add in the sugar.  Pour in the milk.  <\/p>\n<p>Heat the gelatin in the microwave until it is melted. Spread this over the red crumb base to seal it.<\/p>\n<p>Add a bowl upside down in the centre and pipe your white cheesecake mixture around the edge.   Place that in the fridge to set.<\/p>\n<p><strong>Watermelon Jelly<\/strong><br \/>\n345g (12.17 ounces) fresh seedless watermelon (to make 375mL (12.68 fluid ounces) or 1 1\/2 cups of juice)<br \/>\n1 packet strawberry jello \/ jelly<br \/>\n45mL (1.52 fluid ounces) or 3 Tbsp water<\/p>\n<p>Tip the jelly crystals into the water and stir well.<br \/>\nPlace the watermelon into a blender and blitz to make juice.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.howtocookthat.net\/public_html\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod-550x238.png\" alt=\"watermelon dessert recipe how to cook that\" width=\"550\" height=\"238\" class=\"aligncenter size-large wp-image-34756\" data-wp-pid=\"34756\" srcset=\"https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod-550x238.png 550w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod-300x130.png 300w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod-60x26.png 60w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod-400x173.png 400w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2016\/07\/watermelon-dessert-recipe-ann-rearod.png 1830w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Strain through a fine sieve to get rid of any seeds and the coarse bit of the pulp so that you end up with a smooth clear jelly.<br \/>\nHeat the jelly mixture in the microwave until the sugar and gelatine are melted.  Add to the watermelon juice and mix well, then allow to cool. Take the cheesecake out of the fridge and remove the bowl from the centre.  Pour the watermelon jelly mixture into the middle.
