


{"id":3690,"date":"2013-08-16T19:44:37","date_gmt":"2013-08-16T09:44:37","guid":{"rendered":"https:\/\/www.howtocookthat.net\/public_html\/?p=3690"},"modified":"2016-11-03T12:32:23","modified_gmt":"2016-11-03T02:32:23","slug":"red-velvet-cake-recipe","status":"publish","type":"post","link":"https:\/\/www.howtocookthat.net\/public_html\/red-velvet-cake-recipe\/","title":{"rendered":"Red Velvet Cake Recipe"},"content":{"rendered":"<div class=\"hrecipe\" align=\"center\">\n<img loading=\"lazy\" decoding=\"async\" class=\"photo\" \"aligncenter size-large wp-image-3694\" src=\"https:\/\/www.howtocookthat.net\/public_html\/wp-content\/uploads\/2013\/08\/IMG_5823-550x412.jpg\" alt=\"best red velvet cake recipe\" width=\"550\" height=\"412\" srcset=\"https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-550x412.jpg 550w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-300x225.jpg 300w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-60x45.jpg 60w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-400x300.jpg 400w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-800x600.jpg 800w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2013\/08\/IMG_5823-1200x900-cropped.jpg 1200w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/p>\n<p>Red velvet cake was the best selling cupcake at every store I visited recently in New York City. \u00a0But finding the perfect red velvet cake recipe is no easy task as there are so many variations. \u00a0Some I tried in NY were simply red-coloured vanilla cake with buttercream (which left me wondering what all the fuss was about) but others had a beautiful, unique flavour with rich cream cheese frosting.<\/p>\n<p>If you&#8217;ve been searching for a good red velvet cake recipe then you&#8217;ll have read about the Waldorf Astoria recipe which has buttermilk and vinegar. \u00a0I tried that recipe too and it just didn&#8217;t have that New York taste\u00a0<a title=\"DIY Sweet Tooth Tour of New York\" href=\"https:\/\/www.howtocookthat.net\/public_html\/diy-sweet-tooth-tour-of-new-york\/\">(you can read my self guided sweet-tooth tour of NYC here)<\/a>. \u00a0Finally, after many experiments I discovered that morello sour cherry juice gave the flavour I was after. \u00a0Here&#8217;s my recipe.<\/p>\n<h4 class=\"fn\"<strong>Red Velvet Cake Recipe<\/strong><\/h4>\n<p><span class=\"ingredient\"><span class=\"amount\"> 1 cup minus 2 Tbsp or 150g (5.29 ounces)<\/span> <span class=\"name\">plain flour<\/span><\/span>\u00a0<br \/>\n2 Tbsp\u00a0cocoa powder<br \/>\n3\/4 cup or 164g (5.78 ounces) sugar<br \/>\n1 1\/2 tsp baking powder<br \/>\n1\/2 tsp salt<br \/>\n3\/4 tsp gelatine powder<br \/>\n1\/4 cup or 60millilitres (2.03 fluid ounces) oil<br \/>\n4 egg yolks or 60g (2.12 ounces)<br \/>\n1\/2 cup or 125millilitres (4.23 fluid ounces) concentrated morello cherry juice (made from 1 cup of juice boiled down)<br \/>\n1 Tbsp or 15ml red food colouring<br \/>\n4 egg whites\u00a0or 128g (4.52 ounces)<br \/>\n1\/4 tsp cream of tartar<\/p>\n<p><strong>Red Velvet Cake Directions<\/strong><br \/>\n<iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"https:\/\/www.youtube.com\/embed\/arEjDnYI4UI?rel=0\" frameborder=\"0\" allowfullscreen><\/iframe> <\/p>\n<p>Preheat the oven to 338<span class=\"Apple-style-span\">\u00b0F (<\/span>170<span class=\"Apple-style-span\">\u00b0<\/span>C)<br \/>\nBoil and concentrate the morello cherry juice form 1 cup down to 1\/2 cup and set aside to cool.<br \/>\nPlace the flour, cocoa powder, sugar, gelatine, salt and baking powder into a bowl and whisk together.<br \/>\nMake a well in the centre and add the egg yolks, oil, juice and red colouring but do not stir.<br \/>\nWhip the egg whites with the cream of tar tar until soft peaks form.<br \/>\nUsing the same beaters mix the egg yolk and flour mixture on low speed until just combined.<br \/>\nFold in the egg whites into the cake batter in three batches.<br \/>\nUse a soup ladle to fill each cupcake case to 3\/4 full<br \/>\nBake for 11 minutes or until they spring back when lightly touched.
