Inside is a crunchy chocolate hazelnut base topped with a raspberry gel, milk chocolate mousse and fresh raspberries.  <\/p>\n<div class=\"videoWrapper\">\n<iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"https:\/\/www.youtube.com\/embed\/qH0Zsm3VVrc?rel=0?ecver=1\" frameborder=\"0\" allowfullscreen><\/iframe><\/div>\n<p>&nbsp;<\/p>\n<h4 class=\"fn\">Base<\/h4>\n<p>75g (2.65 ounces) butter<br \/>\n85g (3 ounces) brown sugar<br \/>\nunsweetened cocoa powder<br \/>\n75g (2.65 ounces) plain flour<br \/>\n75g (2.65 ounces) hazelnut meal.<br \/>\n18g (0.63 ounces) cocoa powder<br \/>\npinch salt<\/p>\n<p>Preheat the oven to 180C (356 degrees Fahrenheit)<\/p>\n<p>Place the butter and the brown sugar into the bowl of an electric mixer and beat on high speed until it looks like wet sand. Pour it into a fine sieve using a spoon to push the juices through, leaving the seeds behind. <\/p>\n<p>Squeeze the gelatin to get as much water out of it as you can and add it to the hot raspberries and stir well.<\/p>\n<p>Pour that the mixture into a silicone cake tin and place it in the freezer for about 1 hour so it sets.<\/p>\n<h4>Chocolate Leather<\/h4>\n<p>30g (1.06 ounces) cocoa powder<br \/>\n30g (1.06 ounces) rice flour<br \/>\n10g (0.35 ounces) vanilla<br \/>\n250ml water<br \/>\n50g (1.76 ounces) sugar<br \/>\nAdd everything except the sugar into a saucepan and heat until it starts to boil.  Add sugar to taste.<\/p>\n<p>Tip half of the paste onto  some baking paper and  spread it in an even thin layer to the full length of your baking tray.  Repeat that with the other half. You want it to look creased and crumpled not totally smooth so give it some texture.  It will cool quickly because it is so thin.<\/p>\n<p>Remove the raspberry gel from the freezer, take it out of the mold and place it onto the base bending it up and pressing down to make it fit right to the edges.<\/p>\n<h4>Chocolate Mousse<\/h4>\n<p>300g (10.58 ounces) milk chocolate<br \/>\n600g (21.16 ounces) cream<br \/>\n75g (2.65 ounces) egg yolks<br \/>\n102g (3.6 ounces) sugar<br \/>\n40mL (1.35 fluid ounces) water<br \/>\n70mL (2.37 fluid ounces) cream<br \/>\n11 gelatin sheets<br \/>\nextra water to soak the gelatin.  <\/p>\n<p>Place the gelatin in the water and leave to bloom.<\/p>\n<p>Whip the first quantity of cream to form soft peaks.<\/p>\n<p>Add the water, sugar and egg yolks into a bowl resting over a pan of simmering water.  Beat with electric mixers until the mixture is hot and airy.  Remove from the heat.<\/p>\n<p>Melt the chocolate and set aside.<\/p>\n<p>Take the remaining cream and heat it to just boiling.  Remove from the heat and add the squeezed gelatin sheets.<\/p>\n<p>Pour the hot cream mixture into the melted chocolate and stir well to make sure it is well combined.  <\/p>\n<p>Add the egg yolk mixture and gently mix it through, keeping as much air as possible.
