


{"id":771,"date":"2011-09-25T00:42:44","date_gmt":"2011-09-24T14:42:44","guid":{"rendered":"https:\/\/www.howtocookthat.net\/public_html\/?p=771"},"modified":"2016-10-20T10:29:04","modified_gmt":"2016-10-20T00:29:04","slug":"lemon-meringue-cupcake-recipe","status":"publish","type":"post","link":"https:\/\/www.howtocookthat.net\/public_html\/lemon-meringue-cupcake-recipe\/","title":{"rendered":"Lemon Meringue Cupcake Recipe"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-773\" title=\"lemon-meringue-cupcake\" src=\"https:\/\/www.howtocookthat.net\/public_html\/wp-content\/uploads\/2011\/09\/lemon-meringue-cupcake.jpg\" alt=\"delicious lemon meringue cupcake recipe\" width=\"450\" height=\"602\" srcset=\"https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-meringue-cupcake.jpg 450w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-meringue-cupcake-300x401.jpg 300w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-meringue-cupcake-224x300.jpg 224w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-meringue-cupcake-400x535.jpg 400w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/>These are one of my favourite cupcakes, light fluffy italian meringue offset with tangy lemon curd and vanilla cupcake.<\/p>\n<p><strong>Vanilla Cupcakes:<\/strong><\/p>\n<p>Make the cupcake using the vanilla cake recipe on the bottom of this post:\u00a0<a title=\"vanilla cake recipe\" href=\"https:\/\/www.howtocookthat.net\/public_html\/mickey-mouse-cupcakes-with-mickey-inside\/\">vanilla cupcakes<\/a><\/p>\n<p>While they are cooking make your lemon curd and italian meringue.<\/p>\n<h3><strong>Lemon curd recipe<\/strong><\/h3>\n<p>165g (5.82 ounces) or 3\/4 cup caster sugar<br \/>\n2 eggs plus 2 yolks<br \/>\nzest of 2 lemons<br \/>\n240 millilitres (8.12 fluid ounces) or 1 cup lemon juice<br \/>\n90g (3.17 ounces) or 1\/3 cup and 1 Tablespoon\u00a0unsalted butter, chopped<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-772\" title=\"lemon-curd-recipe\" src=\"https:\/\/www.howtocookthat.net\/public_html\/wp-content\/uploads\/2011\/09\/lemon-curd-recipe-300x224.jpg\" alt=\"lemon curd recipe\" width=\"300\" height=\"224\" srcset=\"https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-curd-recipe-300x224.jpg 300w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-curd-recipe-400x299.jpg 400w, https:\/\/www.howtocookthat.net\/wp-content\/uploads\/2011\/09\/lemon-curd-recipe.jpg 450w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Whisk together the sugar, eggs, yolks, lemon zest and juice.<\/p>\n<p>Microwave in 1 minute intervals whisking each time until it thickens.<\/p>\n<p>Whisk in the butter, then pour curd into jam jars or drinking glasses covered in plastic wrap and store in the refrigerator.<br \/>\n&nbsp;<\/p>\n<h3><strong>Italian Meringue Recipe<\/strong><a title=\"How to Make a Lego Ninjago Cake &amp; How to make Italian Meringue\" href=\"https:\/\/www.howtocookthat.net\/public_html\/lego-ninjago-cake-how-to-make-italian-meringue\/\"> (click here for video instructions)<\/a><\/h3>\n<p>1\/4 teaspoon\u00a0cream of tartar<br \/>\n3\u00a0large eggs<br \/>\n1 cup or 216g (7.62 ounces) caster sugar<br \/>\n1\/4 cup or 63 millilitres (2.13 fluid ounces) water<\/p>\n<p>Seperate the eggs and whisk the white to form soft peaks.<br \/>\nPut the sugar and the water in a saucepan and bring to the boil.<br \/>\nWash down the sides of the pan with a pastry brush and leave unstirred until it reaches 238F (114.44 degrees Celsius) on a candy thermometer.<\/p>\n<p>Immediately remove from heat and with the beaters running, pour in a thin stream into the egg whites.<\/p>\n<p>Beat until cooled. \u00a0This can take a while so if using hand mixers I like to put a bowl of iced water underneath the mixing bowl to speed up the cooling process.
