We had a lego themed party which went down a treat &#8211; read about the party games\u00a0<a href=\"https:\/\/www.howtocookthat.net\/public_html\/?p=97\" target=\"_blank\"><strong>here<\/strong><\/a>. \u00a0The cake is a layered <a title=\"Best Chocolate Cake Ever\" href=\"https:\/\/www.howtocookthat.net\/public_html\/best-chocolate-cake-ever\/\" target=\"_blank\">chocolate cake <\/a> with chocolate mousse covered in Italian meringue. \u00a0The figures and words are made using <a title=\"Sugar Paste \/ Fondant Basics for Cake Decorating\" href=\"https:\/\/www.howtocookthat.net\/public_html\/sugar-paste-fondant-cake-decorations\/\" target=\"_blank\">fondant<\/a>\u00a0. You could substitute for toy ones if you would prefer. Video instructions on how to do the logo lettering can be found <a title=\"Four different ways to do fondant lettering\" href=\"https:\/\/www.howtocookthat.net\/public_html\/four-different-ways-to-do-fondant-lettering\/\" target=\"_blank\">here.<\/a> Scroll down for the video showing how to make the lego logo out of fondant.<\/span><\/p>\n<p><strong>Italian Meringue:<\/strong> is a beautiful light fluffy frosting for cakes and is used in many other recipes too, so it is a good skill to learn. It is brilliant white but it can be coloured and flavoured to suit your needs.<br \/>\nYou will need a candy thermometer for this recipe. I have been asked where I got my thermometer from. \u00a0I bought this <a href=\"http:\/\/www.amazon.com\/gp\/product\/B0000AQL25\/ref=as_li_tf_tl?ie=UTF8&amp;tag=howtocookthat-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369&amp;creativeASIN=B0000AQL25\" target=\"_blank\">Digital Candy Thermometer<\/a> for around twenty dollars. Wash down the sides of the pan with a pastry brush and leave unstirred until it reaches 238<sup>o<\/sup>F or 114<sup>o<\/sup>C on a candy thermometer.<\/div>\n<div class=\"instruction\">3. Immediately remove from heat and with the beaters running pour in a thin stream into the egg whites.<\/div>\n<div class=\"instruction\">4. Beat until cooled. \u00a0This can take a while so if using hand mixers i like to put a bowl of iced water underneath the mixing bowl to speed up the cooling process. When it is cool it will be thick smooth and glossy.<\/div>\n<div class=\"instruction\">5. Add flavours and colours if desired. Note:\u00a0if you want brilliant white, do not add vanilla essence as it will give a creamy tinge.<\/div>\n<div class=\"instruction\">6.
