Americas Best Choc-Chip Cookies, Apple Marshmallow & ChickPea Cheesecake

Americas Best Chocolate Chip Cookies
Here’s how to make the please and thankyou chocolate chip cookies at home, without buying a box mix.
164g (5.78 ounces) Unsalted butter
3 eggs
280g (9.88 ounces) brown sugar
136g (4.8 ounces) white sugar
1tsp vanilla
420g (14.82 ounces) plain all purpose flour
1/2 teaspoon baking powder
tiny pinch of salt
260g (9.17 ounces) dark chocolate chips

1. Leave the butter out of the fridge to soften.
2. Place the butter, sugar and brown sugar in a bowl and mix on medium speed to combine, scrape the bowl and mix again.
3. Add the eggs and vanilla and mix on high until it resembles whipped frosting.
4. Add the flour and mix on low until nearly combined
5. Add the chocolate chips and mix until you can’t see any more flour.
6. Place the bowl int eh refrigerator to rest for at least 1 hour.
7. preheat the oven to 180C (356 degrees Fahrenheit)
8. Use a cookie scoop to place scoops of dough onto a tray lined with parchment paper.
9. Bake for 11 minutes only. Remove from the oven and leave on the hot tray for a further 5 minutes. They may seem slightly underdone, but are supposed to be reheated just prior to eating.

Apple Marshmallows
40g (1.41 ounces) gelatin
3 3/4 cups or 600g (21.16 ounces) peel chopped apples (approximately 4 apples)
100mL (3.38 fluid ounces) water
1 T honey or sugar
Place the apples and the water in a pan and simmer over low heat until the apples are soft. Place in the bowl of a stand mixer add the sugar and gelatin and whip until fluffy. Place in a dish lined with baking paper and set in the fridge.
