Dessert that looks like an Avocado
I have made this dessert to have a citrus avocado flavour naturally coloured by the avocado. If you’d prefer, you could use a food colouring and a cheesecake mixture instead.
To make the avocado dessert you will need:
Avocado Skins
200g (7.05 ounces) dark chocolate tempered makes 6 halves plus a little left over.
4 avocados scooped carefully to separate the yellow and green flesh (see video).
Lime Avocado Cream
430g (15.17 ounces) green avocado flesh
215mL (7.27 fluid ounces) milk
70g (2.47 ounces) sugar
3 tsp lime rind
2 tsp gelatin
2 tablespoons lime juice
Orange Avocado Cream
210g (7.41 ounces) yellowy avocado flesh
105mL (3.55 fluid ounces) milk
45g (1.59 ounces) sugar
2 tsp orange rind
1 tsp gelatin
Avocado Seeds
144g (5.08 ounces) white chocolate
18g (0.63 ounces) dark chocolate
120g (4.23 ounces) green avocado cream (see above)
Melt the chocolate and combine with the avocado cream. Pipe into a balloon the size of an avocado seed and freeze. In hindsight I’d make these a day ahead from straight ganache so they have time to freeze overnight (100g (3.53 ounces) milk chocolate and 35mL (1.18 fluid ounces) of cream).
Almond Praline
1 cup sugar
1/4 cup water
100g (3.53 ounces) slivered almonds

I just turned 11, and I wanted to make this, since it looked so cool. It was a lot harder than I anticipated, but 8t was so fun at the same time. It tasted really good, as well. My seeds didn’t turn out so well, so I put them in as a spot holder, then took them out at the end.

Hi Gelly, You could try just adding cream instead of the avocardo cream or use ganache and then freeze as per Ann’s suggestion.
Can this be made ahead of time? If yes how to store it?
Hi Ann can you make the seeds with frozen cream dyed?
Hi Katrina, You could try that but it will be more difficult to get the look of the seed and it won’t stay firm, it will soften quickly on thawing.

Could you just make the avocado cream then split it into parts and just color them there proper colors? Also, does this quantity make just one dessert?
Hi Rachel, Ann made this recipe to have 2 flavours of cream, coloured by the avocardo. She also gives a link for a cheescake style cream that you can colour instead. This recipe makes 6 serves

I used soy milk and it worked fine, I’m sure it would work with almond milk, it just won’t be as creamy.
