Pretty Butter Cream Flower Cake

This beautiful flower cake is made entirely from buttercream and it is easier that you’d think. I’ll show you in the video how to create the flowers and put the whole thing together. This would be perfect for anyone who loves getting a bunch of flowers.

 

Basic buttercream recipe for flowers

buttercream frosting recipe for flowers
120g (4.23 ounces) or 1/2 cup plus 2 tsp butter
2 1/2 cups or 315g (11.11 ounces) icing sugar (icing mixture is fine-it does not have to be pure icing sugar)
1-4 Tbsp or 15-60 millilitres (2.03 fluid ounces) milk or cream

Leave the butter to soften at room temperature, then beat together with the icing sugar and 1 tablespoon of milk (or cream) until smooth and light in colour. Add extra spoons of milk one at a time until the desired consistency is reached.

 Mascapone Filling Recipe

250g (8.82 ounces) or 1 cup cream cheese
250g (8.82 ounces) or 1 cup mascapone cheese
65g (2.29 ounces) or 1/2 cup icing sugar
1 tsp vanilla extract

 Sponge Cake
one and a half times this fluffy sponge cake recipe baked in three 8″ round tins

 Coffee Syrup Recipe:
cofee syrup for cakes ann reardon
50millilitres (1.69 fluid ounces) or 3 Tbsp and 1 tsp water
75g (2.65 ounces) or 1/3 cup sugar
1 teaspoon instant coffee
Heat together the water and sugar until it is dissolved. Add the coffee. Apply liberally to the sponge cake.

    Can I use white chocolate ganache for the buttercream flowers? It is because i don’t really like the texture of the basic buttercream?

    • Hi Athena.C, Ann thinks it is likely that the ganache will not hold the shape well.

      • instead of basic buttercream (american buttercream ), what buttrcream /ganache / any things can i use for the buttercream flowers ?

    The rainbow steam cake had these buttercream flowers as the topper. It was a huge hit. I found this frosting very sensitive to temperature. In the video it’s mentioned that if you live somewhere hot to top your cake fast. It is not hot where I live, technically still winter. We had to stop midway and refreeze flowers. Regardless, we were so happy with the result. It was my first foray in piping flowers. Fun!!

    • Great job Elizabeth. Ann usually will take a couple of flowers out of the freezer at a time, to keep them easy to work with. If you found that your buttercream was a little too sensitive, you could slightly reduce the milk/cream quantity.

  3. How long does the buttercream stand for in room temperature?

    • Hi Jerrimae, it will depend on what the room temperature is in your environment. It is usually very stable in a cool environment or standard room temp of 21-22C

    Hi Ann!
    I would like to try to make this lovely cake but I want to practice piping flowers first. I am searching where to buy the “flower spike” that you used but can’t find anything like that. I am seeing the plastic ones that holds the flower sugar and you have to insert on the cake itself. Would you mind telling me what brand is that you were using and what exactly it’s called please? I would really appreciate your help.

    • Try searching instead for an icing flower nail.

  9. What piping nozzle do you use to apply the buttercream to the cake? It looks like a very large nozzle.

    • Hi Nancy, Ann used a 789 tip to apply the frosting to the side of the cake.

  15. I want to ask i m in qatar here the temp is mostly 40-50 degree only winters which are for one month hardly is better
    I have to add crisco to make it better and when i use more icing to make stable it became too sweet
    My flowers are not bery stiff like urs

      You can use meringue powder , it is available at tavola store, and wiltone , it is super in our wether, add one table spoon, it is tasteless, and make buttercream flowers looking fabulous
