Cake Scraps Fudgy Brownie Recipe
When you make a large carved cake you end up with lot of off-cuts, which are known as ‘cake scraps’. This recipe turns these scraggly off-cuts into crazy, good, fudgy brownies. They are delicious served warm with ice-cream, or cold at any time of the day.
To make my cake scraps brownie recipe you will need:
Makes 25cm (9.84 inches) x 17cm (6.69 inches) brownie
100g (3.53 ounces) or 1/3 cup plus 2Tbsp margarine or butter, melted
2 eggs
1/2 cup or 108g (3.81 ounces) sugar
1/4 cup or 30g (1.06 ounces) cocoa powder
3 1/2 cups or 350g (12.35 ounces) cake crumbs
chocolate chips and nuts (optional)
Place the cake in the food processor to make crumbs. Add the remaining ingredients and process again until the mixture is smooth and thick.
Pour into a lined baking tin and sprinkle with chocolate chips and nuts. Bake in a moderate oven 180C (356 degrees Fahrenheit) until a knife inserted into the centre comes out clean.

Hi, I was wondering if I could make these with gluten free cake? I have a banana chocolate bundt cake that failed…Im trying to repurpose it instead of throwing it out . Thank you
I made these and improvised a bit, dredging from memory some high school algebra to increase the ingredients proportionally. I started with almost a pound of flavorless, dry, store-bought marble cake. Not wanting to throw the cake out, I searched the ‘net for ideas to resurrect the offending pastry. The ratio I used to increase the ingredients by was 1.23; however, I ended up using three eggs and adding 1 teaspoon of vanilla extract. I tasted the raw batter (a “no-no,” I know) and it still didn’t taste chocolatey enough to me, so I melted an ounce of unsweetened chocolate and added that to the mix. I also threw into the batter a generous cup of bittersweet chocolate chips. I left out the nuts because I’m a chocolate purist. The brownies came out pretty good, although not as good as from scratch. Great use of dry, disappointing cake though! I’ll remember this if I am ever again faced with such an appalling dilemma.
I did this recipe was awesome just a few things to consider : Add one egg more, some vanilla add chcoochips 😊. Bake 20 min. Thank you, I will make it again

Thank you, thank you, thank you! Hate wasting food.. Brownies came out great! I chopped up peanuts & Hershey Kisses to sprinkle on top, that’s all I had!
I have used the recipe multiple times with different cake crumbs (vanilla, chocolate cakes or muffins or cupcakes etc). The brownies always come out great. Yummm!!
