Mickey Mouse Cupcakes with Mickey inside

Mickey was everywhere, even honeymooners donned Mickey Mouse hats with veils. It was Disney World after all, but I still did not expect the level of devotion that the adults had for the Disney characters. These cupcakes are a tribute to our time spent at Disney World and to all those Mickey Mouse LOVERS! It does not matter from which side you bite into these cupcakes, Mickey Mouse is there to suprise and delight the little and big kids alike.

 

Dark Brownie Mixture for Mickey on Inside

(you only need half of this recipe but I make the whole amount and let the kids have some).

1 cup or 220g (7.76 ounces) butter
2 1/4 cups or 490g (17.28 ounces) sugar
4 eggs
1 1/2 cups or 240g (8.47 ounces) plain flour
1 1/4 cups or 150g (5.29 ounces) unsweetened cocoa powder
1 tsp baking powder
1 tsp instant coffee powder (optional)
1 Tbsp vanilla (optional)

Preheat oven to 180C (356 degrees Fahrenheit). Melt the butter, allow to cool then add the sugar and eggs and mix well. Add the remaining ingredients and mix until combined. Spoon into a 17.5cm (6.89 inches) x 27cm (10.63 inches) tin and spread to the edges. Bake for approx 20-30 minutes or until a knife inserted into the centre comes out clean, try not to over bake them.

To make the brownie ‘paste’ crumble the brownies into a bowl (remember that you only need half the brownies if you made the full recipe). Add 1/2 cup of vanilla cake batter and 1/4 cup of water and stir well. If it is still very dry and crumbly, this will be the case if the brownies were a little over baked, then you may need to add up to another 1/2 cup vanilla batter and 1/4 cup water. Once you have a moldable paste you can make your mickey shapes (see video below).

Crumble the brownies into a bowl. Add the vanilla cake batter and 1/4 cup of water and stir well. If it is still very dry and crumbly, this will be the case if the brownies were a little over baked, then you may need to add extra cake batter and water until you have a thick shapeable ‘dough’.
Take 2 teaspoons of mixture and roll into a ball. Using another 3 teaspoons of mixture roll a snake that is 9cm (3.54 inches) (3.5”) long and join the two ends to make a donut shape. Place the donut on top of the ball like a crown. The mixture is quite sticky so use wet hands to make it easier to work with. Repeat to make 12.

Vanilla Cake Cupcake Recipe

(this recipe has been updated to give a softer, yummier cupcake)
(makes 12 cupcakes)
6 Tbsp or 80g (2.82 ounces) butter or margarine at room temperature
1 1/2 cups or 330g (11.64 ounces) sugar
2 cups or 320g (11.29 ounces) flour
3 tsp baking powder
pinch of salt

2 eggs
1 cup or 250mL (8.45 fluid ounces) full cream milk (4% fat)
1 tsp vanilla essence

Place the butter and dry ingredients into the bowl of an electric mixer and whisk until it resembles fine bread crumbs.  Place the wet ingredients in another bowl and beat with a fork until well combined.

Add half of the wet mix into the crumb mix and beat for 30 seconds with the electric mixer on slow speed, add the remaining wet ingredients and mix for a further 30 seconds or until just combined (do not over mix).

Put a spoon of cake mixture into the bottom of 12 cupcake cases. Add a 3D mickey brownie shape (watch the video below for a demonstration of how to make these) then top with more cupcake mixture. Bake in the oven for approximately 15 minutes at 180C (356 degrees Fahrenheit).

Frost with buttercream (click to open the buttercream recipes and flavors post). Top with your mickey logo chocolate decorations (these are demonstrated in the video for info on how to temper chocolate and what chocolate to use click here).

Hi i made this recipe today to test for my son’s birthday next week, i think i may have made the brownies too damp because it was really sticky but it did its job as mickey shape. my issue was my cupcake batter was really runny didn’t look like yours. I compared mine to get an image to pancake mix whereas yours looked like pudding. if that helps, so do you have any suggestions on where i may have gone wrong? im gonna try this recipe again tomorrow but wasn’t sure if you’ve had anybody else had an issue. everything tasted great and looked cute just trying to fine tune it before the big day.

    • hi tiffany, the cake mix will be slightly thinner than on the video because the vanilla cake recipe was updated after subscriber requests for a moister vanilla cake

    I just tried this and failed horribly. The brownies tasted delicious but here’s what I did… I baked in two 8×8 square pans and I paid very close attention to not overcook them. But it seemed no matter how long I baked, they still came out gooey in the middle. I finally cooled them and tried to make the paste anyway but needless to say it just came out a sticky, unusable mess. I need to get this right for a birthday party. Was the square pan the only problem?

    • Hi Amanda, check your oven temp and bake them longer if they are still gooey in the middle they are not yet done. Or if using it gooey you probably don’t need to add as much of the cake batter as you are effectively adding brownie batter instead.

  4. can i just use original tempered chocolate to do the topper or do i have to add anything to the tempered chocolate?? like butter or anything since the original tempered chocolate is very thick.

    • hi wendy yes you can use tempered chocolate for the toppers

    I just came across these super cute cupcakes on YouTube & printed out the recipe. Was just re-reading it & saw that you mixed cake batter into the brownies. While watching the video I just assumed it was frosting. So my question is: do you take 1/2 cup of batter from the vanilla cupcakes to mix into this or do you make another batch of vanilla cake mix. If its another batch, is it the same recipe as the cupcakes or a different recipe? Thank you!

    • hi winnie, yes just take 1/2 a cup out of your vanilla cake batter

    Hi
    I made these cupcakes today and they turned out better than I expected
    I just had a question about making the snakes/ears
    – mine kept breaking when I tried to turn them into a circle/crown
    Do you think this meant my brownie mixture was too damp or too dry?

    • Hi Rox, if it was crumbly then yes too dry, if soggy then too wet, it should be around playdoh consistency just a bit stickier.

  8. I am wondering if I can use regular box mixes for both brownie and cupcakes to cut down on time? Will the method of mickey still work?

    • hi michelle, you may need to adjust the amount of cake mixture you add to the cooked brownie to get the right consistency but it should still work.

I’d like to ask you and I’m sorry if you’ve said it here on in your video, I missed it if you did, how many cupcakes can you make from this recipe? I have to make around 50 cupcakes for my nieces birthday and I’m not very experienced with measuring.     • hi mahony, the cake mixture should make 12, the brownie mixture if you use it all should be enough for 24-30 depending how big you make your mickey

  16. Love this! Do you have any suggestions you can give on making Polka Dot Cupcakes? I am a little confused on the polka dot process. I don’t want to mix frosting with the cake balls to give them the support to stay together and I don’t want them to taste over cooked.

    • Hi Jennifer have you tried mixing cake batter with the crumbs rather than frosting? Most people who make polka dot cupcakes just add tiny scraps of coloured cake broken up in the cupcake mixture.

    Hi Ann,
    I have been trying to make these cute cupcakes and finally had a chance to make them last night. They turned out great even though i filled the paper cups too full. I had to cut the excess around the cupcakes . Nevertheless, they are super cute and yummy! Thanks so much!!

  18. Hi couple of questions…1) was the temp suppost to be 356 or 350 degrees 2) Can I use cake flour instead of the cornflour as well as still using the plain flour?

    • Hi Lauren, 350 will be fine, I type in the degrees C and my website automatically puts it in F, hence the weird exact numbers. If you have cake flour it is the same as plain flour with the addition of cornflour.

  19. For the brownie part when you make it was the temp. suppost to be at 350 degrees or 356?

    • Hi Lauran,I type in the australian 180 degrees centigrade and a program on my website converts it to Fahrenheit for me hence the weird number, so yes 350 F will be fine.

  20. So would i be able to use 2 TBSP of cake flour so would i still need the baking powder

    • Hi Lauren, the baking powder makes it rise, cake flour is like normal flour but with a slightly different protein content so that it gives a softer cake.
