Rain drop cake with edible flower inside
Raindrop cakes are not really ‘cakes’ as such they are more of a clear jelly or jello. In this video I will show you how to make a raindrop with a 3D edible flower inside. They are very pretty and a bit lighter on the calories than most desserts. If you’re after spiders in jello you can find them here.
To make the raindrop cake you will need:
Needle: hypodermic nipro flomax 19G X 38MM
Syringe: 10millilitres (0.34 fluid ounces) luer lock latex free (if you buy more than one you will not have to wash it out every time you want a different colour).
Clear jello using powdered gelatin
56g (1.98 ounces) or 4 Tbsp powdered gelatin
1 cup or 250millilitres (8.45 fluid ounces) cool water
1 litre (0.26 gallons) or 4 cups water
300g (10.58 ounces) or 1 1/3 cups sugar
1/4 tsp citric acid (or other clear flavoring)
Mix together the gelatin and 1 cup of cool water and leave to absorb the liquid.
Place the 1L (0.26 gallons) of water, sugar and citric acid into a saucepan and heat until sugar is dissolved.
Stir through the gelatin until it dissolves and then pour into containers and leave in the fridge to set.
Clear jello using gelatin leaves
16 sheets of leaf gelatin (note the gelatin I used says 12 sheets sets 1 L (0.26 gallons), we are making a slightly firmer gelatin so I am using a little more. Leaf gelatin can come in different strengths, check the instructions on your packet for how much gelatin is required to set 1 L (0.26 gallons), then increase slightly)
bowl of cool water
1 litre (0.26 gallons) or 4 cups water
300g (10.58 ounces) or 1 1/3 cups sugar
1/4 tsp citric acid (or other clear flavoring)
Place the gelatin leaves in the bowl of cool water and leave to soften.
Put the 1L (0.26 gallons) of water, sugar and citric acid into a saucepan and heat until sugar is dissolved.
Squeeze the water out of the gelatin and add to the pan. Stir well then pour into containers and leave in the fridge to set.
Clear jello using agar agar
13g (0.46 ounces) or just less than 1 1/2 Tbsp agar agar
1 cup or 250millilitres (8.45 fluid ounces) cool water
1 litre (0.26 gallons) or 4 cups water
300g (10.58 ounces) or 1 1/3 cups sugar
1/4 tsp citric acid (or other clear flavoring)
Add the agar agar to the cup of cool water and let it sit for 5 minutes.
Place the 1L (0.26 gallons) of water, sugar and citric acid and agar mixture into a saucepan and bring to the boil. Boil for a couple of minutes to ensure the agar agar is dissolved.
Pour into molds and leave set. Note agar sets at room temperature so you do not need to refrigerate.
Colored Jello
20g (0.71 ounces) or 2 Tbsp powdered gelatin
125millilitres (4.23 fluid ounces) or 1/2 cup water
395g (13.93 ounces) tin sweetened condensed milk
Food colours (pink, blue, yellow, green)
Mix together the gelatine and cold water and leave to swell.
Heat in the microwave to melt it then add in the sweetened condensed milk. Split into smaller bowls to colour. If the mixture sets before you’re ready to use it – remelt in the microwave or on the stovetop.

Hi Rads, agar agar is only liquid when very hot – it is set at room temperature. I would imagine trying to inject very hot coloured liquid would be difficult as it will cool in the needle and get stuck. And if you could inject it veery hot it would potentially melt the surrounding clear agar and therefore not work.
Can this cake be transported without melting? I’ve seen a few recipes that can’t but yours seems to be really stable as you are handling it, inecting it, and even dip it into hot water.
Hi Alice, it won’t melt but like any jelly or jello based creation, it will be impacted by heat and humidity. It is best to move it as little as possible to avoid splitting and to keep refridgerated till service.

I noticed no one stated that you can get different sizes of syringes from farm stores. They have frome small for small animal to very large for equine and bovine use. They also have a bunch of sizes of needles, from very small to large. They are also cheaper than the vet and pharmacy prices.
I have been buying them for over 30 years for my pets & art. I give my dogs their shots, all but rabies. I use them for dyes, inks, glues, and injecting flavors into meats. I even used one to insert wood glue in between layers of mahogany veneer that had separated on a desk, along with weight, no replacement or refinishing needed.
Only illegal if you use them for illegal purposes!
I tried this recipe and it worked out AMAZINGLY! I also have a suggestion for you, somewhat like a challenge. Make a Wolf or Wolf head Cake~ I bet you could do it!

I checked into getting some agar, but it comes in powder, flakes or bars. What form of agar does the 13 g in your recipe refer to? I will have to experiment for the colored part as I can’t use gelatin for a vegetarian. Maybe pectin would work. Thank you.

Hi Ursel, Usually agar is found as a powder here. If you can’t have standard gelatine, try halal gelatine which is made from beans, it apparently works very well.

Hi Lizbet, I am not sure what an ‘industrial’ needle is but if it is similar in function and is hygienically clean then it should work fine.

Hi Captain Voldermort, A few USA states require a prescription but most will permit purchasing a small quantity with a photo ID but generally you must be over 18. These kind of syringes are usually not difficult to obtain via online suppliers as long as the quantity is low. Check with the authority in your state as it what is permissible. If you can’t purchase this model, ask what is a permissible alternative for catering purposes as there are plastic syringes & needles available for commercial and non-medical tasks.
You can buy needles of ebay for filling your printer ink or I got them for years for my Yorkie that had diabetes. No Script required,

Hi Nancy, hmmm that would be tricky you can buy specific tools for making flowers in jelly but you still need the syringe to attach them too, search for gelatina flower tool.

If people are still having trouble purchasing items.. Walmart has been known to sell syringes for animal use or in the U.S. in the MIdwest area we have farming supply stores (Farm & Fleet, and Fleet Farm- similar name, different stores, feuding brothers, long story, lol). I personally bought the actual Gelatin Art needles online from the Wish app. A suggestion for the younger people is to purchase a prepay credit card (Walmart, Walgreens, dollar stores, etc.) and then purchase the needles or art kits online from Amazon or Ebay.

Hi Vickie, Ann purchased those quite a while ago now so I can’t give you the original supplier. Currently many ebay suppliers have containers with a slightly flattened or stepped top which would still work for this recipe. Hi Ann I see a lot of people here in the states are having trouble finding needles every state allows you to get them from a Vet supply after a lot of checking I got mine from ShopMedVet they sell single and boxes I bought the boxes so ended up with 100 syringes and needles Including shipping my total cost was just $17.85 and delivery was just 2 days

Hi Caitlyn, you could swap the citric acid for a clear flavouring essence. Avoid juice. You will need to experiment with the quantity to ensure the flavour is subtle and enjoyable.

Hi Debbie, Ann usually purchase in bulk and puts away the extras for the next adventure! Some suppliers do sell quantities under 50 but the price does go up. Cake decorating stores often sell these in packs of 6 or 10.
