Spaghetti Birthday Cake

I get lots of requests for easy birthday cakes, this one is so easy that my kids made it for their dad’s birthday. His favourite meal is spaghetti and his cake of choice is carrot cake.

Spaghetti Birthday Cake Recipe

Carrot cake:
This makes two small cakes, you will one whole one and 1/4 of the other one in the sauce and so will have some spare. You could use a bigger bowl and make one bigger cake using most of the mixture and bake a little separately for use in the sauce.
2 cups grated carrot
2 eggs
1 cup or 210g (7.41 ounces) sugar
1/4 cup or 60ml oil
1 tsp or 5ml vanilla
1 1/4 cups or 190g (6.7 ounces) flour
2 tsp cinnamon
2 tsp mixed spice
1 tsp baking powder
2/3 cup or 100g (3.53 ounces) walnuts
1 tablespoon chopped glace ginger (optional)
Mix together the oil, eggs and sugar in a bowl. Mix in the remaining ingredients and mix until just combined. Divide between two greased bowls or one larger and one smaller bowl. Microwave on high for 5 minutes. Allow to cool

Cream Cheese Frosting:
1 quantity of the cream cheese frosting Recipe This will make more than you need but you can use the leftovers on the spare cake.

Spaghetti Raspberry Sauce:
1 cup frozen raspberries
Juice of 1/2 a lemon
40g (1.41 ounces) white chocolate
yellow food colouring (optional)
1/4 of one of the carrot cakes

‘Meat balls’:
5 Ferrero Rochers

‘Parmesan Cheese’:
30g (1.06 ounces) white chocolate

    Hey ann… i made this cake for my dad because his fave. Cake is also carrot cake :D i send a picture… oh i did it all by my self and im 13 :)
    I used smaller chocolate balls but i used more…

    I just made this for my husbands birthday. He loves lemon so I made a lemon cake instead of carrot. It was a huge hit!

      I should also mention I used a brownie instead of carrot cake, and strawberry jam with a bit of lemon juice. It was tasty, just not nearly as pretty as yours

    What kind of oil did u use? N what do u mean by mixed spice??

      Mixed spice is a blend, you can find it in spices isle at a local supermarket, it should say mixed spice on there, I think that’s what Anne means.

    Do we have to use the carrot cake or can we substitute it for chocolate cake
    N the cream cheese frosting can be substitute for white chocolate ganache
