Miniature Donuts Recipe


 

I finished making these donuts, took a final photo and walked out of the kitchen leaving the donuts on the counter. When I returned they were gone! It appears we have a mouse! A very well fed mouse. Imagine its delight at finding a mini sized kitchen with cute freshly prepared food. If only I was filming. As cute as it sounds a mouse running free in my kitchen is not hygienic so I have had to set up some traps to deal with that issue. Perhaps I should actually get a tiny pet and let it eat the finished food.

Donut Recipe

Makes 14
4 cups or 640g (22.58 ounces) flour, plain or all purpose
60g (2.12 ounces) or 1/4 cup sugar
14g (0.49 ounces) or two sachets instant dried yeast
90g (3.17 ounces) or 1/4 cup butter, melted
250ml or 1 cup (4% fat) milk, warmed
2 pinches of salt
1 tsp vanilla
2 eggs

Add all the wet ingredients in to the bowl followed by the dry ingredients. Knead the mixture until it becomes elastic. You can use a stand mixer with a dough hook for about 5 minutes or a bread machine set to dough. If kneading by hand you will need to keep kneading for about 8 minutes.

Place the dough in an oiled bowl, cover with plastic wrap and stand in a warm place until it doubles in size. Punch it down, roll out and cut donut shapes. Place onto non-stick baking paper baking paper and allow to rise a second time.

Heat up the oil to 375F (190.56 degrees Celsius) and deep fry your donuts, flipping them over once the underside is golden brown. Watch the full-sized donut video to see what happens if you overheat your oil.

Chocolate Glaze Recipe:
60g (2.12 ounces) or 1/4 cup butter
3/4 cup or 95g (3.35 ounces) icing sugar
1/4 cup or 30g (1.06 ounces) cocoa powder
1 tsp glucose or corn syrup (optional, helps make the glaze shiny)
approx 1 Tbsp boiling water

Place all ingredients into a bowl and heat for 20 seconds in the microwave, stir and heat for extra 10 second bursts if required. Use immediately.

Vanilla Glaze Recipe
1 cup or 125g (4.41 ounces) icing or powdered sugar
25 mL (0.85 fluid ounces) or 2 Tbsp of water
10 white marshmallows
1 tsp glucose or corn syrup (optional)

Place all ingredients into a bowl and heat for 20 seconds in the microwave, stir and heat for an extra 10 seconds if required. Use immediately.

Cinnamon Sugar:
1 cup or 215g (7.58 ounces) sugar
2 Tbsp ground cinnamon

    Hi Anne, I’d not been able to follow ur channel for almost a month now because I was relocating. Just saw your giant m & m video last night and heard about James.     Hello Ann!

    I’m not sure if you’ll check this comment, but I’m in urgent need of help!
    Tomorrow, a guest will be arriving here who’ll be leaving soon for Canada to bring back is wife and a new-born child. So, before he leaves, I want to make something indulgent for him.
