Topsy Turvy Cake Tutorial

A pretty topsy turvy cake with different flavours on each layer so everyone is happy.  Beautiful fresh flowers are a fast way to finish off the cake and I’ll show you the trick to keeping them looking good.

To make this topsy turvy cake you will need:

1 quantitiy of my perfect sponge cake recipe (click to open sponge cake recipe and video here)  baked in a 15.5cm (6.1 inches) and a 20cm (7.87 inches) tin.

Tiramisu layer

20cm (7.87 inches) sponge cake (see above)

Coffee Syrup
2 tsp instant coffee
1/3 cup or 73g (2.57 ounces) sugar
1/3 cup or 83g (2.93 ounces) water

Mascapone Frosting
500g (17.64 ounces) or 2 cups mascapone cheese
1/2 cup or 125millilitres (4.23 fluid ounces) cream
1/4 cup or 55g (1.94 ounces) sugar

1 packet Savoiardi sponge finger biscuits

1 ribbon to tie around the cake.

Macaron Layer
15.5″ sponge cake (see above)

White chocolate ganache
260g (9.17 ounces) white chocoalte
25g (0.88 ounces) or 2 Tbsp butter
86g (3.03 ounces) or 1/4 cup plus 2 Tbsp cream
5 drops vanilla custard flavouring
15 drops wilton’s salted caramel flavouring

One quantity of the basic buttercream recipe
red, pink and blue food colouring

One quantity of macarons shells recipe coloured in three shades. Note: using powdered colour is best for macarons, if using liquid colour use only a small amount or they will crack.

For the cupcake on top
Candy melts – color burst brights and dark cocoa
1 real cherry, choose one that is bright and shiny
mini candies to go inside
3d cupcake mold
edible silver pearl dust and a clean dry paint brush

For the flowers
fresh flowers of your choice, try and choose ones that tie in with the colour of the cake frosting and ribbon.

  1. Hello there. Can i use the sponge cake recipe to make Mocha cake? If yes, how? How tall does the cake measure with this recipe? What makes this recipe moist? I am following a chiffon cake recipe and it tends to dry.. ingredients are 1 1/2 c apf, 1 t baking powder, 1/4t salt, 1/3c oil, 1/2 c water, 4 yolks, vanilla. (I use 2 8″×2″ round pans but ended up 2″ high cake after levelling). Is there anything else i should add more to make it moist? Hope to hear from you. Thanks much..

    • Hi Yasmine, Ann gets hundreds of requests and while she loves the ideas, can’t do them all. She plans the tutorials well in advance.

  4. Hi Miss Ann, great cake tutorial, but I’m planning to do your chocolate cup, if I use melted compound chocolate to do the cup will it set at room temperature? Becoz when I tried it, it didn’t set, just became soft and when you touch the chocolate it just melts in your hand…

    • Hi Kaylee, Check the ingredients on your chocolate. If it is compound chocolate but you are finding it melts really easily, it probably has a very high fat content. A good compound chocolate will be stable at room temperature so you might need to try a different brand. If you are using real chocolate containing cocoa butter, it will melt easily and not hold its shape unless you temper it.

  5. We’re do you get your bowls?

    • Hi Katie, Ann uses quite a few bowls in this tutorial. If you are referring to the Baking Tins, Ann got some of these from Bakers Secret. Most of the other equipment would have been found locally at a supermarket or department store.

    The thing is there is one guy I really really like and his b-day is coming and I know he likes this dragon guitar a lot, and of course I dont have millions to buy him a real one so I was thinking making him a dragon guitar cake.I know it’s kinda too much to ask but it would be so helpful and great that if you can make a tutorial about it.Thank you so much!

    • Hi CC, Thanks for your suggestion. Ann gets heaps of requests every week and it isn’t possible to do them all. In addition, she has to plan and film the tutorials well in advance, so answering these kind of requests is just not possible.. Why not have a go at making your own design? Make a template of what you want the finished cake to look like and start planning!

  10. Hi Ann, does the flowers need to be organic? I am thinking of using flowers on my cake but hesitate because I’m not sure if it is ok to use non-organic flowers on cakes? Also may I know where can I get that stopper for the straw?

    • Hi Faithy, Obviously you don’t want to put plant material that may carry chemicals need your cakes. In most cases, flowers are not sprayed with such things as it would damage the blossom, but every region would have different arrangements for this. Cake decorators have been putting flowers on cakes for years so as long as you are not planning on eating them and you know where they are sourced from you should be okay. Ask your florist if the flowers have been sprayed with anything. If in doubt use something else. The cake spikes come with the stopper lid. If you are referring to the purple tube, Ann used a plastic cake support.

Hi Ann, thanks for all the best recipes you post on how to cook that.you really inspired me and now I want to try the cakes.my doubt is , I want to buy a conventional microwave and im really confused weather an otg is best or a conventorional microwave for baking cakes.pls help me cause u bake a lot and I think you can answer me the best .pls answer me.I can’t Waite for long to bake a cake.thanq.

    • Hi Sunainageorge, I bake all my cakes in the oven. I do not have a convection microwave so I can not bake in it. Sorry I can’t say if they are any good or not for baking because I’ve never used one.

    • yes I believe you can use edible flowers I did 🙂
