Little girls everywhere have fallen in love with the Disney Frozen movie, watching it repeatedly.  Singing the ‘Let It Go’ song until parents don’t want to hear it anymore.  Come birthday time they are of course wanting an Elsa cake.  This one is as magical as the movie character herself with a flowing dress and beautiful see through glistening cape.

Frozen Elsa Cake

For the cake part you will need:

One and a half quantities of the rich chocolate cake recipe baked into two 20cm (7.87 inches) round cake tins and one 1L (0.26 gallons) greased bowl.

For the decorations

1 Elsa Doll
1 x 30cm (11.81 inches) round cake board
1 piece of flexible clear plastic
2kg (4.41 pounds) white fondant note: I had 800g (28.22 ounces) left over but you need this amount so you can easily roll it out big enough to place over the doll
blue and green gel colour to make the dress colour
white luster dust
clean dry paintbrush
sharp knife, offset spatula
homemade cookie cutter (for instructions see the ipad cake video)

For the cape:
216g (7.62 ounces) or 1 cup of caster (superfine) sugar
63ml or 1/4 cup water
tiny bit of blue gel food colouring
non-stick baking paper
paper towel

Optional – home made snow flakes and snow around the cake board

  3. Hi, I am short on time on cake-day, can I make sponge ahead and freeze? And how far in advance can I make frosting? Thanks Linda

    • Hi Linda, Yes you can. Make the sponge pieces prior, cool and wrap in plastic wrap to seal and protect them before freezing. You will need to let them come to room temperature before covering in fondant or the moisture from the cake will seep into your fondant. Frosting can be made a couple of days ahead and refrigerated.

  4. Hello! I’m sorry if this has been asked but do you know how much batter your cake recipe makes? I was trying to find a comparably sized recipe because chocolate isn’t a favorite of my kids. I usually use cups but if you can give me whatever you’ve got I can try and convert it. Thanks!

  5. HI! Is this recipe enough for twenty kids?

    • Hi Chrisa, It will depend on the size of serves. I think it would be reasonable to get 15 serves from this cake but you could potentially squeeze 20. You could make some ‘ice’ cube cakes to go with it to make a larger number of serves.

  6. Hi – what color gels to use to achieve that color? Should it be example 1 part green and 2 parts blue?

    Thank you so much for a wonderful recipe. I made your Elsa cake for my daughters 8th Birthday. It was my first time making marshmellow fondant , it tore in places and was a bit messy to work with but in the end my daughter and her friends loved it! Thank you for giving me the confidence to make my Childs Birthday Cake :))

  8. the cape went green but still

    • Hi Oshun, If your cape has green it may mean that your sugar went brown because it was taken too far in the cooking process. You can avoid the possibility of the sugar browning by using isomalt instead.

  9. What temperature must the candy reach when its ready. Some of it crystallises when going cold.

    • Hi Anne, If you are finding it starts to crystallize that usually means some sugar crystals have been left in the mix. Brush the sides of the pan down during the cooking to ensure there are no sugar granules left on the edge that might seed the crystallization process.

  10. could you plese advise how to make the cape-step by step-my blue caramel made non transparent after putting on paper

    • Hi Izabella make suer you wash down the sides of the pan, if you have any sugar crystals on the side it can make the sugar crystalize when you pour it out.

    • Hola, Para fazer a capa de Elsa você precisará 216g ( 7,62 onças ) ou 1 xícara de açúcar refinado ( superfino ) ,
      63 ml ou 1/4 xícara de água , e uma
      pouquinho de gel azul corante alimentar. O modelo está disponível apenas através da loja on-line , que pode chegar clicando no botão ‘ comprar agora botão’ ou indo para a loja usando o menu no topo da página.

  14. Hi Anne, I just discovered your website and it is so inspiring! I made your Elsa cake for my daughter’s 3rd birthday. I was going to make the cape but I chickened out at the last moment! I was happy with the cake though I didn’t buy enough fondant so I couldn’t make a big enough circle to achieve your beautiful ripples in the skirt. Also I had the same problem as someone else and I had to use snowflakes to cover a few holes. Overall I was really proud of myself and needless to say, my daughter absolutely loved it!

  15. hi! this cake is marvellous…i try my very best to make my daughter happy with it…but what is going wrong if the cape is not dry and hard after a few hours?

    • Hi Joy, The sugar cape sets very quickly if it has been prepared correctly. It is possible that the sugar didn’t get hot enough or cook for long enough.

    Seeing a tight schedule ahead: How much time ahead can you actually make this cake?

    • Hi Pamela, You could make the cake 2 days ahead at the most otherwise the cake loses its freshness. The sugar cape would need to be stored in a cool spot in an airtight container and just popped on before serving as the sugar starts to go when it is exposed to the moist air.

  18. Hi Ann, your cake totally inspired me! So much so that I overcame my fear of fondant (which I have never worked with before) and had a stab at it today for my daughter’s 6th Birthday Party tomorrow. Well, I learned a lot. My fondant broke fairly easily when I tried to lift it so I think I didn’t have the mixture quite right. I had to make fondant snowflakes to cover up a few spots, which I then ended up scattering all over the dress. Also, I cut a hole in it before lifting it onto the doll. A hole that was WAAAAAAAAAAAY too big. So I had to do extra layers to cover up the mistake. But, it turned out ok in the end and my little girl LOVES it! Thank you, thank you for your amazing instructions and adding magic to our special day. 🙂

    • Hi Nadine, we think your cake looks great and your snow flakes are beautiful. If you made your own fondant, then you did beautifully. If you found your fonant a little challenging, try using aa good pre-made one as they are often more tolerant and flexible.

    To make a long story short, I’ve had a lot of balls in the air so to speak and between many things happening and not falling through, here I am today with just over day to make this cake and I’ve never worked with fondant! So one of the delays was looking all over for different ingredients and waiting for amazon orders and before the ingredients to make fondant came in, I bought marshmallows to see if that would work out just in case, but was never able to try it out. So my question is, given I have all the ingredients for your home fondant recipe and marshmallow version, with such short time which should I go with to have the best chance of success. Also my confectioners suger has cornstarch in it, couldn’t fine pure.

    • Hi Oscar, well I guess you have made the cake now. How did it go? Our apologies but we just get too many comments and questions to answer the in short time frames. Hopefully you did an amazing job and you were pleased with the finished cake.
